Ingredients

  1. 3 quarts water
  2. 1 (12-ounce) bottle beer
  3. 1 teaspoon black peppercorns
  4. 2 teaspoon crab boil seasoning (recommended: Old Bay)
  5. 2 bags frozen corn kernels
  6. 1 head celery, 1-inch dice
  7. 1 large onion, 1-inch dice
  8. 7 pounds red potatoes, quartered
  9. 2 pounds smoked sausage, cut into 1-inch pieces
  10. 2 pounds shrimp, peeled, deveined

Instructions

  1. Bring water and beer to a boil in a stockpot. Add peppercorns and crab boil seasoning. Add corn, celery, onion and potato and cook 12 to 15 minutes. Add sausage and shrimp and cook 15 minutes more. Serve in bowls with cooking broth.

So yummy! I used 1 lb of shrimp and 1 lb of red potatoes, and 1.5 tbspn Zatarain’s liquid concentrated Shrimp & Crab Boil – a little goes a LONG way – and this version yields 6-8 servings. Serve over rice or as a stew, and it’s perfect.

We like more Old Bay also… 3/4 C. .. Little Red Pepper and 2 Cloves of Garlic … perfect….Also, the corn needs to be on the cobb and leave the shells on the shrimp. Object is to throw it on the table (newspaper works well and start grabbing…

I had a good friend from South Carolina who used to make this all the time. This was a great reminder. I like a little more crab boil and corn on the cob but it is otherwise excellent.

I live in Mt. Pleasant, SC where it is also called Beaufort Stew. Please use corn on the cob. The whole idea is to be able to eat the dish with your hands. I agree with the Old Bay seasoning, but we use a lot more than that! Also, Zatarain’s makes a Crab Boil in a bag. Toss that in the pot while cooking for the best flavor–a bit spicy…but too bland otherwise.
