Ingredients
- 8 ounces soba noodles or whole-wheat spaghetti
- 4 teaspoons toasted sesame oil, divided
- 1 tablespoon minced pickled ginger
- 1 (1 1/4-pound) pork tenderloin, cut into 1-inch chunks
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 4 scallions (green and white parts), chopped
- 1 tablespoon sesame seeds
- 1 cup reduced-sodium chicken broth
- 1/4 cup reduced-sodium soy sauce
- 1/2 cup sliced water chestnuts, drained
- 1/4 cup chopped fresh cilantro leaves
Instructions
- Cook the soba noodles according to the package directions. Drain and transfer to a large zip-top plastic bag. Add 2 teaspoons of the oil, seal the bag, and shake to coat the noodles.
- Meanwhile, heat the remaining 2 teaspoons oil in a large skillet over medium heat. Add the ginger and cook, stirring, for 1 minute. Increase the heat to medium-high; add the pork, and cook, stirring, until browned on all sides, about 5 minutes total. Add the salt and pepper and stir to coat the pork. Add the scallions and sesame seeds and cook, stirring, for 1 minute. Add the broth and soy sauce reduce heat to medium, and simmer until the pork is cooked through, about 5 minutes. Remove from the heat and stir in the water chestnuts.
- If you’re stopping here:
- Let cool to room temperature, then transfer the mixture to a large zip-top plastic bag or plastic container and refrigerate along with the bag of noodles for up to 3 days.
- When you’re ready to eat:
- Combine the pork mixture and soba noodles in a large skillet set over medium heat and simmer for 5 minutes to heat through. You can also reheat the noodles and pork mixture together in the microwave for 3 to 5 minutes on HIGH. Meanwhile, chop the cilantro.
- Remove from the heat, stir in the cilantro, and serve.

Didn’t do the pork as we had chicken satay as the main. Added garlic, some dried arbol chilies and extra stock. Really liked these noodles, they are great with asian grilled veggies(Foodnetwork’s grilled baby bok choy!) and various meats. Will definitely add this into rotation!

I made this last night and my hubby and I both enjoyed it. I made some modifications based on prior reviews — added garlic and red pepper flakes to give it more flavor, added corn starch to thicken, and used powered ginger because I didn’t have pickled or fresh. I also added some edamame. Will definitely be making this one again.
I made this tonight and it turned out great. I made a few modifications. I marinated the pork in ginger, garlic and soy sauce for two hours. I used rice noodles instead of soba noodles. It’s very flavorful and the pork is perfectly tender. I will definitely make this again.
This is one of those easy classic dishes that everyone loves. I love cilantro & ginger & the sesames add texture. It’s simple yet flavorful. You can bring it anywhere for hard to please kids & adults. I do daycare & all the kids request it! Thanks Robin!

This was a great meal, and so easy to make! I tried it with rice noodles instead of Soba (unavailable) and my family loved it!
I have 4 important guys in my house, and their taste buds don’t always agree. Usually there is a lot of chatter and sometimes resistance to eating (even by the 30 year old – lol), but this dinner was almost like meditation. It was very quiet because no one had an empty mouth. This included a 20 month old little boy, too! I couldn’t find soba noodles and also forgot to get the chicken broth so I used whole wheat linguini and water to sub. It still was great. There was some left over because I doubled the recipe and none went to waste (leftovers usually rot at my house). Robin hit a homer at my house.
I used fresh ginger because I couldn’t find the pickled kind. Otherwise, I followed the recipe exactly. Pork was a bit bland and the dish itself needs a little something.
My family loved this recipe. I did add some garlic and didn’t add the salt as per other reviews. Next time I will add snow peas and carrot to add some color. Very tasty and easy to prepare.
