Penne with Spinach Sauce

Ingredients

  1. 1 pound whole wheat or multi grain penne
  2. 3 garlic cloves
  3. 2 ounces goat cheese
  4. 1 ounce reduced fat cream cheese
  5. 3/4 teaspoon salt
  6. 1/2 teaspoon freshly ground black pepper
  7. 6 ounces fresh baby spinach leaves
  8. 2 tablespoons freshly grated Parmesan

Instructions

  1. Bring a large pot of salted water to boil. Add the penne and cook until it is tender but still firm to the bite, stirring occasionally, about 12 minutes.
  2. Mince the garlic in a food processor. Add the goat cheese, cream cheese, 3/4 teaspoon of salt, 1/2 teaspoon of pepper, and half of the spinach leaves. Blend until the mixture is smooth and creamy. Set the cheese and spinach mixture aside.
  3. Meanwhile, place the remaining spinach leaves in a large bowl.
  4. Drain the pasta, reserving 1 cup of the cooking liquid. Spoon the pasta atop the spinach leaves in the bowl. Scrape the cheese and spinach mixture over the pasta mixture and toss to coat, adding enough reserved cooking liquid to moisten. Season the pasta, to taste, with salt and pepper. Sprinkle the Parmesan over and serve.

This was really good. I followed the recipe with the exception of whole wheat pasta. I used regular pasta (personal preference). I do agree with others, the garlic was a bit overpowering. I never thought such a thing was possible! I love garlic. I would cut it back to 2 cloves next time. Easy to follow instructions and quick and simple dinner. yummy.

I first made this for my family in 2007.  My then 6 year old daughter fell in love with the dish.  The garlic is too strong for some so we just cut back on how much garlic we use.  I have never watched the video of Giada making the dish until today 10 years later.  It has always turned out like hers!  Just wanted to share that we have been enjoying this dish for 10 years now!
