Ingredients

  1. 1/3 cup extra-virgin olive oil
  2. 1/4 cup fresh lemon juice
  3. 1 shallot, minced
  4. 1 small clove garlic, minced
  5. Kosher salt and freshly ground pepper

  7. 1 teaspoon sugar (optional)
  8. 2 pounds mixed heirloom tomatoes, cored, seeded and cut into 1/2-inch pieces
  9. 1 pound pasta, such as campanelle, penne or fusilli
  10. 12 ounces fresh mozzarella cheese, cut into 1/2-inch pieces
  11. 1/2 cup chopped fresh basil
  12. 1/2 teaspoon grated lemon zest

Instructions

  1. Whisk the olive oil, lemon juice, shallot and garlic in a large bowl. Season with salt and pepper. Add sugar, if desired (depending on the sweetness of your tomatoes). Add the tomatoes and gently toss. Marinate at room temperature, about 15 minutes. 
  2. Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Drain in a colander and run under cold water to stop the cooking. 
  3. Add the pasta and mozzarella to the tomato mixture and toss. Stir in the basil and lemon zest, and season with salt and pepper. Refrigerate, tossing occasionally, until serving.

Delicious, bright taste.  The added lemon with olive oil and lemon zest give it the freshest taste!  Used up my tomatoes which were plenty sweet and my garden basil.  Thanks for a nice summer dish!

What i did i used the tomato mixture as a side but added a little less olive oil jurist so it isn’t runny 🙂

This is a great recipe forthose great heirloom tomatoes. I didn’t have a shallot in the house so I used the white part of a couple of scallions. Capers are a nice addition to this dish

Cannot imagine adding Balsamic as someone suggested.  This recipe is perfect thanks Joe and Jill.  Albeit I substituted creamy, sweet/mild Goat Cheese for the mozzarella (find it boring, sorry don’t want to offend).  I also did not add sugar.  I just don’t get the bland…salt and pepper a must with the tomatoes.  Bon Apetit!

All it needs is a little balsamic and probably more basil than the recipe calls for. So good!

Perfect summer meal! Followed it exactly and did not add the sugar. Was not bland if you add the right amount of salt and pepper. I may add sliced black olives next time. Yum!

This salad is great- quick, easy and delicious.  I followed the suggestion of the reviewer who suggested adding balsamic vinegar- the perfect final ingredient that added just a tiny bit more flavor.  A huge hit at my cookout, and my picky husband loved it.  Definitely a keeper.
