Herb Cheese Raviolis

Ingredients

  1. 1 cup ricotta cheese
  2. 2 tablespoons mixed chopped herbs, parsley or basil
  3. 1/4 cup grated parmesan
  4. Salt and pepper
  5. 1 egg, lightly beaten
  6. 18 wonton wrappers
  7. Water
  8. Tomato sauce
  9. Basil leaves

Instructions

  1. In a small bowl combine ricotta cheese, herbs, parmesan, salt and pepper and egg. Place one teaspoon of cheese mixture in center of wonton wrapper and wet two adjacent sides of square. Fold opposite corners over to form a triangular ravioli. Set on wax paper and repeat process with remaining wrappers.
  2. Bring a large pot of water to a boil and season with salt. Reduce water to a simmer and gently add raviolis. Cook for 4 minutes and remove with a slotted spoon to drain. Serve with warm tomato sauce. Garnish with basil leaves.

These were a little time-consuming to make (store-bought ravioli would have been much easier), but tasty nonetheless. I could only find egg roll wrappers, but I cut them up into smaller squares and they worked just fine. I served them with a marinara sauce, but they were great on their own too! My only problem was that after cooking and straining the raviolis, they tended to stick together. But overall, I was glad I tried this recipe!
