Chickpea Chicken-Noodle Soup

Ingredients

  1. 3 tablespoons extra-virgin olive oil
  2. 4 ounces spaghetti, broken into small pieces
  3. 1 carrot, thinly sliced
  4. 2 cloves garlic, chopped
  5. 1 teaspoon ground cumin
  6. 1/4 teaspoon ground cinnamon
  7. 3/4 cup chopped fresh cilantro
  8. 4 cups low-sodium chicken broth
  9. 1 15-ounce can chickpeas, drained and rinsed
  10. 1 15-ounce can diced tomatoes
  11. Kosher salt and freshly ground pepper
  12. 2 small skinless, boneless chicken breasts (about 1 pound), thinly sliced

Instructions

  1. Heat the oil in a large pot over medium-high heat. Add the spaghetti and cook, stirring, until lightly toasted, about 2 minutes. Add the carrot, garlic, cumin, cinnamon and half of the cilantro; cook, stirring, until the spices are toasted, about 1 minute. Add the broth, chickpeas, tomatoes, 1 cup water, and salt and pepper to taste. Cover and bring to a simmer, then reduce the heat to medium low and cook until the spaghetti is just tender, about 8 more minutes. 
  2. Season the chicken with salt and pepper and add it to the soup. Simmer until cooked through, about 2 minutes. Add the remaining cilantro and season with salt and pepper.

We thought this was awesome!  Very warm and comforting soup.  We did not think the cinnamon was overpowering and added just the right amount of warmth.  Super easy.  My 2 1/2 year old loved it, too!

Love this soup. I reduce the cinnamon by half but everything else as written. Barilla sells cut spaghetti which is perfect for this recipe. I make a turkey version with Thanksgiving leftovers for something a little different

Have to repost this as my review disappeared! I love, love, love this soup! It’s a family favourite now, in fact I made homemade chicken broth today so I could make my soup tomorrow. I agree with another poster about needing to have the cilantro because I think it is vital to the recipe. I didn’t add the cup of water that the recipe asks for because I thought it would dilute it. I just use my homemade broth and it’s perfect!

I love this soup! I’m eating as I type. It was quick and easy and tastes like I simmered it all day. After reading the other reviews I used less cinnamon and it still tastes great. Perfect weeknight meal during the chilly months.

I thought this was a great, quick soup. Toasting the noodles is key & don’t make this without cilantro, you don’t want to miss that aroma! I didn’t have carrot on hand so I used celery and it was just as tasty, plus, I don’t usually like cinnamon but I added it anyway.. will probably cut back on it a little next time.
