Blue Cheese Spinach Orzo Sauce

Ingredients

  1. 3 tablespoons butter
  2. 3 tablespoons flour
  3. 1 cup milk
  4. 1 pound orzo, cooked and cooled
  5. 3 cups crumbled blue cheese
  6. 1 tablespoon salt and white pepper blend
  7. 2 cups fresh spinach
  8. 1 cup diced tomato

Instructions

  1. In a saucepan over medium-high heat, add the butter to melt. Once the butter has melted, reduce the heat, add the flour and stir to create a roux; the roux should be pale blond in color. Once the roux is made, reduce the heat again to low, add the milk, stirring into the roux and cooking until the roux has thickened. Finally, add the blue cheese, 1 cup at a time, until all the cheese has been added and well blended. Season with the salt and pepper blend. Remove from the heat and continue to stir to ensure consistency. 
  2. Once the sauce has been prepared, add the orzo, spinach and tomatoes and stir to incorporate into the cream sauce. Allow the orzo to warm with the sauce, then remove from the heat and serve. This has a shelf life of 5 days.

I get this as a side at Dodge City every time I go, so I started looking up recipes to make my own and came across this original! Absolutely fantastic and SO easy. I cut the recipe approximately in 1/3 for sides for myself for the week and it came out excellently.

Great dish. My family and I ate at Dodge City after seeing the episode of Restaurant Impossible. The owner was very gracious and kind and offered us a tour. I was sad to see that business seemed to be slow for the evening, but the quality of the meal we had did not suffer. I orderd the Blue Cheese Spinach Orzo Sauce, and it was so great, that I decided to see if I too could make it from the recipe offered here, and it was just as good. Maybe I should be a chef. ha ha ha. Try this recipe and Try Dodge City if you’re ever in Harrisburg PA. Both are great.

My hubby and I were in this area on vacation and ate here on Friday night,9/21/12.Hubby had the chicken w/pineapple and I had the Hanger steak with the cheesy orzo that is listed above.All I can say is wow!!! I wanted more and the Hanger steak was delicious too!!!!.The owner and our waitress were very nice.We liked our waitress even tho I didn’t get her name,she had curly brown hair in a ponytail.If I didn’t live so far way,I would go to this restaurant every few weeks.
