An American classic, Waldorf salad gets its name from the majestic Waldorf-Astoria Hotel in New York City, where it was first served in 1896. Crunchy, sweet, savory, and satisfying, it is the perfect use for leftover turkey and all those beautiful fruits and nuts from your Thanksgiving table centerpiece. Chopped ripe pears are a great addition; this tasty salad can also be served on a bed of crunchy butter lettuce in place of the celery root.

Ingredients
- 2 cups shredded leftover turkey meat
- 2 stalks celery, sliced
- 1/2 cup celery leaves, coarsely chopped, plus more whole leaves for garnish
- 1 crisp apple, such as Gala or Macintosh, cored and chopped
- 1 cup red seedless grapes, halved
- 1/2 cup pecans, toasted, and coarsely chopped
- 1/2 cup non-fat yogurt
- 2 tablespoons mayonnaise
- 1 teaspoon honey
- 1/4 teaspoon salt, plus more as needed
- 1 small celery root, peeled and cut into matchsticks
- Freshly ground black pepper
Instructions
- In a large bowl, gently toss the turkey, celery, celery leaves, apple, grapes, and pecans until combined. In a small bowl, whisk together the yogurt, mayonnaise, honey, and 1/4 teaspoon salt until well combined. Put the celery root in a small bowl, add 2 tablespoons of the dressing, and toss to coat completely. Add the remaining dressing to the turkey mixture, season with salt and pepper, and toss gently to evenly dress the salad.
- To serve, spread the celery root evenly onto a serving platter, top with the dressed salad, garnish with celery leaves and serve immediately.

The walnuts in Waldorf Salad are recommended for brain health. This is a recipe I remember from my childhood, when my mom prepared it. After we are left with Thanksgiving or Christmas turkey, it´s always good to have a recipe in which we may use the leftovers.

Great salad! I added the cranberries too…next time I think some toasted sunflower seeds would be nice on top.
Delicious and easy. I added organic dried cranberries because I had them, and substituted walnuts for the pecans I did not have. Was surprised how yummy the simple dressing was. Celeriac was a nice touch as the salad “bed.”
Great recipe. Simple and fresh. Loved the use of yogurt with just a touch of mayo as a lower fat, higher protein but every bit as tasty dressing. Only changes I made was sub of dried cranberries for grapes, because its what I had on hand, and I added a couple of big pinches of tarragon because it felt like it needed that little bit of green if you know what I mean. It’s a keeper.
Did not have celery root and made this salad with leftover Thanksgiving turkey. I just left out a little of the dressing because i didn’t use the celery root and turned out perfect. Delicious!
Wow! Just Wow! Made it exactly as written, except added some dried cranberries. It was a hit with our company and with my husband. I wouldn’t change any other thing.
This is a very delicious and healthy way to use left-over turkey. My husband had it on a sandwich, and I enjoyed it as is or on a bed of lettuce. I’ll probably buy turkey breast just to make this again!
Wonderful! I omitted the turkey in the salad, we had chicken legs instead. I didn`t have any honey, so I substituted some maple syrup – awesome! I also replaced the grapes with a few raisins.
