Ingredients
- 1/2 pound hot Italian sausage, casings removed
- 1/2 cup frozen chopped onions
- 1/2 cup frozen chopped green pepper (recommended: Pict Sweet)
- 2 tablespoons chopped pimientos
- 2 tablespoons canola oil
- 2 cups leftover stuffing
- 2 eggs
- 2 cups diced turkey meat
- Leftover gravy
- Milk
- 6 poached eggs
Instructions
- Heat a large skillet over medium-high heat. Crumble sausage into skillet. Add onions, peppers, and pimientos. Cook 6 to 8 minutes or until sausage is just cooked through, stirring often to break up sausage. Transfer to a large bowl. Clean pan and heat oil.
- Add stuffing, eggs and turkey to bowl with sausage mixture and stir to combine. Add to heated pan and press down with spatula until bottom of skillet is covered with hash. Brown 5 to 7 minutes untouched. Use a spatula to flip over hash and continue to cook another 5 to 7 minutes.
- Meanwhile, take leftover gravy and heat in a saucepan over medium heat. As gravy heats up, whisk in enough milk to thin to desired consistency.
- Serve hash topped with poached egg and warmed turkey country gravy.

I made this for Sunday brunch. Used 3 strips of thick bacon (instead of sausage). Drained bacon oil, then added diced 1/2 cup onion and 1/2 of jalapeno. Added this to stuffing and turkey, mixed with 2 eggs, then fry in pan. Made separate poached eggs (takes 3-4 min), heated up leftover turkey gravy and pour it over turkey hash and poached egg. It was delicious!
Made this tonite. Turned out really awesome. Started with sausage, cranberry, bread and veggie stuffing. I usually patty mine up and fry in pan with eggs for breakfast. That was my only use up to this point for extra stuffing. I made white, sausage like gravy as I was out of turkey gravy. Still was good. Had it for supper. Husband loved it. Will make this again.
Really, really good…and we even forgot to add the gravy! I agree with Twon777…if you start with good “leftovers,” then the hash should be equally good. It was!
This is by FAR the best Sandra Lee recipe I’ve made. My partner and I just sat there and looked at each other after our first bite with a look that just said “Oh Lord, this is good!” So good that we are making another turkey just to have this as leftovers. Not sure why this gets so many negative reviews, when it’s just leftovers that you made originally. It’s almost the same meal that you started with, but a little tweak. The base ingredients are still the same you served to your family in the first place. If it’s bad, it may not be Sandra Lee’s fault. 😉

we love eggs benedict and because this used the poached eggs I thought I would try it and see how it went over- it was a huge hit – i wish we had stuffing & roast turkey around every other weekend so i could make this – it was super easy and while the hash was cooking I was had the perfect amount of time to poach the eggs and heat the gravy – it could not have been more simple – i think i’ll try it with roast chicken next time i make that –

This was a mish-mosh of stuff. Nothing really stood out. I’ve had hash mixtures that made sense but didn’t care for this turkey version.
My teenage son saw this on TV, and asked me to make it. We skipped the gravy. Turkey Hash was a big hit!
I added a little chicken stock to my stuffing to moisten it, and left out the pimento and other veggies. It held together nicely, and was voted a “keeper” by my family!
I am not sure why there are so many bad reviews. Maybe your stuffing was too bready. I used cornbread stuffing that had fresh herbs and it was a new recipe that was outstanding. My whole family LOVED this.
