Turkey Avocado Wrap

Ingredients

  1. 1/4 cup low-fat ranch dressing
  2. 2 tablespoons chipotle salsa
  3. 1/4 teaspoon finely grated orange zest
  4. 4 (8-inch) flour tortillas
  5. 12 ounces sliced oven-roasted turkey breast (from deli)
  6. 1 ripe Hass avocado, pitted, peeled, and sliced
  7. 2 cups mesclun lettuce or sprigs of cilantro
  8. 1 1/2 cups grated jicama
  9. 1 tomato, thinly sliced
  10. 2 scallions (white and green parts), thinly sliced
  11. Kosher salt and freshly ground black pepper

Instructions

  1. In a small bowl, combine the ranch dressing with the salsa and orange zest. Lay the tortillas on a cutting board, and spread the ranch mixture evenly over each one, leaving about a 1-inch border on all sides. Layer the turkey, avocado, lettuce, jicama, tomato, and scallions evenly over each tortilla, still leaving a border. Season with salt and pepper. Roll up like a pinwheel. Halve, and serve.

It’s quick and very easy to make not to mention very flavorfull… Im not a huge fan of ranch or turkey but i love anything with avacados and tomatoes in it… It’s colorful, healthy and the good think is it’s well blended so the turkey doesn’t over power the avacado etc… Try it and im sure you will enjoy it as much as i did!

These wraps turned out to be very tasty. I did not put the full amount of cilantro because I thought it may be too strong, and I personally thought there were a few too many scallions but this may be because I distributed them among three wraps instead of four. No one else complained and my family enjoyed it. Overall they tasted very good and the salsa/dressing was very “zesty” and refreshing
