Ingredients

  1. 4 (3-ounce) filet mignon medallions, rinsed and patted dry
  2. 1 teaspoon Montreal steak seasoning (recommended: McCormick Grill Mates)
  3. 2 tablespoons unsalted butter
  4. 1 teaspoon crushed garlic (recommended: Christopher Ranch)
  5. 1 cup fresh sliced mushrooms
  6. 1/4 cup cognac
  7. 1 tablespoon steak sauce (recommended: A-1)
  8. 1/4 cup heavy cream
  9. 1/4 cup low-sodium beef broth (recommended: Swanson)
  10. 1 tablespoon chives, finely chopped

Instructions

  1. Season both sides of filets with steak seasoning; set aside.
  2. Melt butter in a large skillet over medium-high heat. Add filets and cook for 2 minutes on one side. Turn and cook for 1 minute more. Add garlic and mushrooms and cook for 2 minutes, stirring constantly. Remove filets and set aside on a plate.
  3. Remove pan from stovetop. Tip pan away from you and add cognac. With a (long match or lighter) ignite cognac, keeping pan tipped away from you at all times. When flame has burned out, return pan to stovetop. Stir in steak sauce, cream, and beef broth. Stir thoroughly and bring sauce to a simmer.
  4. Return filets and any accumulated juices to pan. Coat with sauce and warm through. Stir in chives.
  5. Place filets on warm plates. Spoon sauce and mushrooms over filets.

I’ve been making this recipe for over 10 years. We loved it instantly and it became one of our favorite fancy dinners to make for dinners with guest. We always double the sauce and start the filet in the pan to get someone the juices for the sauce then remove to finish on the grill.  I’ve had this dish at many restaurants over the years and this one is still my favorite.

This was great! I always season my steaks with seasoning salt, pepper, garlic powder, and onion powder, so I used that, and I also added 1 tablespoon of Dijon mustard, but no other changes. It was a hit with the whole family, and I will be making this again!

This is without a doubt the best tasting gravy receipe I have ever used. I have used it with standing rib roasts and fillet steaks and roasts. I usually make substitutions as I see fit when using a receipe…. not this one ! It is perfect as written. My sister-in-law Freida, who is a wonderful cook, uses it also and that is indeed high praise.

Oh wow this was absolutely delicious! And super super easy. The sauce was to die for! I only did some minor changes, instead of using montreal steak seasoning, I simply salt and peppered my steak. And I did not use an entire 1/4 cup of cognac, instead I used half of it. But the rest, I followed the recipe in exact. I love Sandra because she finds ways to make classics that are usually time consuming, fast and easy to make and still delicious! It makes things so much easier for full time workers and mothers like me! Thanks Sandra!

I have made this dish for just my husband and me and also for guests at least 4 times now. It turns out perfectly everytime. I would say to make sure the steaks you buy should be UNSEASONED & to use the reduced sodium Steak seasoning- it really cuts down on the salt and lets the flavor of the meat and sauce stand out. Cannot say enough good things about this dish. It’s also VERY QUICK to make.
