Sausage, White Bean and Tortellini Soup

Ingredients

  1. 1 tablespoon olive oil
  2. 4 ounces hot or sweet Italian sausage, removed from casings
  3. 1 onion, chopped
  4. 1 medium rib celery, chopped (about 2/3 cup)
  5. One 15-ounce can white beans, such as cannellini or navy, rinsed and drained
  6. One 15-ounce can diced tomatoes
  7. 2 cups low-sodium chicken broth
  8. One 8- to 9-ounce package of your favorite refrigerated tortellini
  9. Kosher salt and freshly ground black pepper
  10. 1/4 cup prepared pesto
  11. Grated Parmesan, for serving

Instructions

  1. Heat the oil in a medium pot over medium heat. Add the sausage and cook, breaking the meat up with a wooden spoon, until browned, about 4 minutes. Add the onions and celery and continue to cook, stirring, until the vegetables are softened, about 5 minutes. Add the beans, tomatoes, broth and 4 cups water and increase the heat to medium-high to bring to a simmer. Continue to simmer, adjusting the heat if necessary, until the vegetables are tender, about 10 minutes. 
  2. Add the tortellini and continue to cook until they are tender, about 10 minutes. Season to taste with salt and pepper. Serve in bowls topped with a spoonful of pesto and a sprinkle of grated Parmesan.

As others said, a good base for a great soup that you can make your own. I doubled the sausage. Used 4 cups chicken bone broth and 1 cup water. Added dried Italian seasoning and garlic powder. Next time I will double the beans and might add diced carrot. Make sure your veggies are finely diced, this is meant to be a quick soup so not a lot of time for them to cook down. This is a great quick weeknight meal.

Great base for an even greater soup. I added fresh rosemary and garlic to the sausage. Used twice the sausage amount. Also diced carrots and green peppers and added them with the onion and celery. I also use ravioli instead of tortellini from time to time.

Was surprised by the lack of herbs in this recipe so I added fresh rosemary and oregano when softening the onions and celery. Then added fresh minced garlic and cooked for 1 minute prior to adding the beans, tomatoes, stock, and water. I used cheese tortellini so I omitted the parmesan at the end and added fresh, chopped paraley instead. Wonderful flavor and a perfect meal for a chilly winter night!

This was a perfect base for soup I made by looking in fridge and seeing I have most of the ingredients and improvise the rest. It’s soup, put in what you have on hand. I keep cheese tortellini since we’re just two people, quick meal. I always have chicken stock, canned tomatoes and canned beans so this is a win win recipe. Check your fridge and go for it!!! So good

Good base but I needed to add more flavor. Needed a lot more salt and pepper. I also added garlic and basil. Sautéing the garlic with the onion and celery and. Finishing with fresh basil would make it ideal. Do add more liquid as the recipe calls because the tortellini’s will soak up all the liquid.
