Salmon with Sweet and Spicy Rub

Ingredients

  1. Nonstick cooking Spray
  2. 2 tablespoons packed light brown sugar
  3. 1 tablespoon chili powder
  4. 1 teaspoon ground cumin
  5. 1/8 teaspoon salt
  6. 1/8 teaspoon freshly ground black pepper
  7. 6 (6-ounce) salmon fillets, skin and any pin bones removed
  8. 1 tablespoon olive oil

Instructions

  1. Coat your grill or a grill pan with cooking spray and preheat over medium heat. While the grill is heating, combine the brown sugar, chili powder, cumin, salt, and pepper. Brush each salmon fillet with 1/2 teaspoon of the oil, then rub each fillet with about 1/2 tablespoon of the spice mixture.
  2. Grill the salmon, flesh side down, until charred, 4 to 5 minutes. Flip the salmon and cook another 5 to 6 minutes for medium doneness. For well done fish, cook an additional 1 to 2 minutes. Remove to a platter and serve immediately.

Mike S. What you do with the rest of the rub? The other fillets! The recipe calls for 6 salmon fillets, so 1/2 tbs per fillet. I so wish people would pay attention when reading recipes before making comments.

there’s nothing in here that is spicy. Chili powder is not spicy

Awesome! Been doing this way for years. Eat wild salmon several times a week. Skip the brown sugar if you want and add touch of cinnamon with the chili powder! I cook in hot carbon steel with evoo, skin side down few minutes, flip for few other then back to skin side down. Not more than 6/7 minutes total. Throw salmon on spring mix, little avocado, etc…I like mine best cold next morning. So good for us in every way!

This recipe is screaming with delicious sweet spicy flavor! So perfect for salmon! I used honey instead of brown sugar (no sugar on hand) so it made a paste which I spread over each filet. All other ingredients the same. So good!
