Roasted Red Pepper Sauce (with Gnocchi)

Ingredients

  1. 1 (16-ounce) package refrigerated gnocchi
  2. 2 tablespoons olive oil
  3. 3 cloves garlic, minced
  4. 2 (6-ounce) jars roasted red peppers, drained
  5. Salt and freshly ground pepper
  6. 1/2 to 2/3 cup heavy cream, or to taste
  7. 1/4 cup minced fresh basil leaves, plus more leaves torn for garnish
  8. Fresh lemon juice, to taste
  9. Chunk of Parmesan for grating

Instructions

  1. Bring large pot of salted water to a boil and cook the gnocchi according to the package instructions. Drain in a colander in the sink.
  2. In a saucepan, heat oil over medium heat until hot, add garlic and cook, stirring, until golden. Add peppers, salt and pepper and cook, stirring occasionally, for 5 minutes. Transfer to a processor or blender and puree. Return sauce to pan, add cream and bring to a simmer, stirring. Add basil, salt, pepper and few drops lemon juice, to taste.
  3. In a large bowl, toss the gnocchi and sauce together. Divide among bowls, strew over some torn basil leaves, and grate some Parmesan over the top. Serve immediately.

Very delish! Easy and quick. Didn’t have fresh basil but used dried when cooking the garlic. The hubby loved it. And asked to put it into our rotation. Next time definitely will get fresh basil. I also added lemon zest. We like lemon.

This was so quick and easy and tasted wonderful! However, saying that this serves 4 is a little bit of a stretch. My husband loved it so much and wanted seconds and leftovers for work the next day, so next time I will for sure double the entire recipe.

This is a nice weeknight meal and pretty easy, but I wasn’t blown away by the flavors. It’s worth making and a nice alternative to tomato sauce, but it’s not something I would serve to guests.

So simple and yet so tasty! Perfect with gnocchi, too, but this would be good with any pasta, I think.

Instead of transferring to a blender, I used a hand blender in the pan. I didn’t get the world’s most perfect puree, but we’ll call it “rustic”.
