Ingredients

  1. 4 to 6 pounds pork loin, trussed with butcher twine
  2. 4 to 6 garlic cloves, chopped
  3. 4 to 6 tablespoons fresh thyme, picked and chopped
  4. Salt and freshly ground pepper
  5. Olive oil

Instructions

  1. Rub pork loin with garlic and thyme and season well with salt and pepper. Drizzle with olive oil. Marinate in a plastic bag for at least 2 hours to overnight.
  2. Brown all sides and roast on a rack in a roasting pan in a preheated 350 degree oven. Cook until center of loin reaches 160 degrees, about 1 hour and 20 minutes. Allow to rest for 10 minutes before carving.

This was a good recipe. I can’t eat garlic, but I can use garlic infused olive oil, so I did that with the thyme, salt, and pepper, and it came out nice. I took it out of the oven at 155 degrees and it was a tiny bit dry for my taste, so next time I will take it out at 145 and let it rest.

I had never made it before. so I made a go of it with dried thyme and pre-chopped garlic. I also used celery salt and cracked pepper. given the time to rest this was wonderful.I even had leftovers for parmesan toast the next day.

This pork roast marinated in the fridge for about 4 hours then i browned all sides on the stovetop. the roast was cooked on the BBQ covered in tinfoil….this was an excellent moist roast that everyone loved!
