Ingredients

  1. 1 (2 to 3-pound) side salmon, skin on
  2. 2 lemons, juiced
  3. 4 tablespoons stone-ground mustard
  4. 1 cup shelled pistachio nuts
  5. 1/2 cup panko bread crumbs
  6. 4 tablespoons canola oil
  7. Salt and freshly ground black pepper

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Arrange the side of salmon on an oven proof baking sheet, skin side down. Mix the lemon juice and mustard together in a small bowl and spread sparingly over the top of the salmon.
  3. Coarsely grind the pistachios in a food processer. Add the panko bread crumbs, the oil and salt and pepper, to taste. (The bread crumbs should be slightly wet, as it helps the stick to the salmon.)
  4. Sprinkle the pistachio mixture over the mustard to cover the salmon evenly.
  5. Put in the preheated oven and bake until the salmon reaches the correct doneness, about 15 to 20 minutes. Remove from the oven to a serving platter.
  6. Remember the fish needs to rest outside of the oven for at least 5 minutes. It will continue to cook, so remove the salmon from the oven with this in mind. Enjoy.

Great recipe! It’s probably the best salmon I’ve ever eaten. I cut the recipe in half because I had a 1.5 lb piece of salmon. I also used French Dijon mustard because I didn’t have stone ground. It was perfect.

Juice of two lemons then spread sparingly?

Perfecto!

I really enjoyed the crunch on the salmon! Will make this again but will probably be more generous with the mustard / lemon juice mixture for more flavor… or even put some chili powder or cayenne in the breadcrumb mixture for spice.

The only thing I would recommend improving is to have more of a buttery sauce, to go on top

For a single person this is a great recipe to dress up salmon. Very easy and takes little time to prep. I paired it with an arugula and radicchio salad. I will be adding this to my go to recipes.

This was excellent and impressed dinner guests! However, when I make it again going to use 1/4 the mustard and add butter and fresh herbs before the crust. Thanks for recipe!
