Instructions

  1. Bobby’s Perfect Patty
  2. Shape 6 ounces of 80 percent lean ground beef chuck into a uniform patty, no more than 3/4 inch thick (don’t overwork the meat). Make a depression in the center with your thumb so the burger won’t bulge; the indent will rise as the patty cooks. Preheat a grill or cast-iron grill pan to high. Brush the burger with canola oil and season with salt and pepper. Grill until golden brown and slightly charred, turning once (7 minutes for medium-rare). Avoid pressing with a spatula! Add cheese for the last minute of cooking.
  3. Provolone
  4. Oozy cheese makes this burger: Two slices of aged provolone are added during the last minute of grilling.
  5. Hot Peppers
  6. Bobby likes his Philly cheesesteaks with lots of pickled hot peppers, so he loads them on here, too.
  7. Roasted Peppers
  8. In place of classic griddled bell peppers, Bobby uses roasted red peppers, sliced into strips.
  9. Onions
  10. Bobby sautes thin rings of Spanish onion in canola oil until soft and golden to top off the burger.

I may not be a Philly native, but the short-order cook who introduced me to Philly Cheesesteaks was. Since I’m allergic to peppers, she was kind enough to substitute mushrooms sauteed with onions to the perfect crispness – shaking her head every time I ordered it. The BEST (in my opinion)! This is the burger version of Robby’s, circa 1974.

Mmmmm made this yesterday. So easy, quick, delicious. It’s the worst when ppl rate recipes on the “authenticity.” Did you actually make it? No? Then leave a comment but don’t rate it. You could call this recipe a lasagna for all I care…it’s good!

bobby flays burgers are the best, this is one burger i could eat three times a day but i limit it to once a month. i followed this and its so good. the toppings for this is my favorite. i will try his other burgers. thanks bobby! you are my favorite iron chef! can’t wait for next month!!

Made this burger today and it was a big hit with the family! Followed the recipe and it sure doesn’t need any condiments, it’s already flavor packed and juicy.What a wonderful bunch of toppings for this burger. Our favorite topping were the hot peppers. Will make this recipe a lot in the future!!!

Don’t listen to the other comment about not adding hot peppers….add what makes you happy. And hot peppers on a cheesesteak…delicious. And I’m from Philly.

I am from Philly and no one in Philly puts hot peppers on a Philly Cheese steak. If you want to call it a true philly burger, get rid of the hop peppers and you need a tomato or pizza sauce on top. Get it right.
