Ingredients
- 8 fillets boneless catfish
- 2 cups milk
- 3 1/2 cups white cornmeal
- 3 1/2 cups yellow cornmeal, coarser grind
- 1 teaspoon salt
- 1 teaspoon red pepper
- 1 teaspoon black pepper
- 4 tablespoons granulated garlic
- 4 tablespoons thyme, dried
- Cajun seasoning
- 1/4 cup melted butter or butter cooking spray
- Tartar sauce, optional
Instructions
- Soak catfish in milk for approximately 1 hour, in the refrigerator. In a bowl, mix together white and yellow cornmeal. Spice up the cornmeal with salt, red and black pepper, granulated garlic, thyme, and Cajun seasoning, to taste.
- Preheat oven to 400 degrees F.
- Take the fish out of the milk and shake off the excess milk. Dip the fish fillets in the spiced cornmeal mixture. Put the fillets on a buttered cookie sheet and drizzle butter over the fish. Or you can use a butter spray. Bake fish in oven for approximately 10 minutes. Time may vary depending on the thickness of fillet. Fish should get a nice crusty, golden color. Serve with tartar sauce.

Good recipe, had to add some different seasoning to get the taste we were looking for
Turned out very crispy! I heated
a large flat cast iron skillet sprayed with the cooking spray for 5 mins added my fillets and sprayed the tops with more spray. Continued baking on the bottom rack for 10 mins at 425 degrees. Remove fillets and flip
them for another 10 mins and return to bottom rack. I also used a store bought breading.

Have cooked this twice, great both times. Only thing I do different is I marinade the fish in La hot sauce for a couple of hours before I add the milk.
The next best thing to southerned fried chicken. I soaked my fish in milk for about 20 mintues instead of one hour. I cooked 4 fillets therefore …I used only 2 cups of cornmeal, one white & one yellow and cut all the spices in half …except the red pepper.
I didn’t have milk or regular corn meal, so I used cornbread mix instead and it turned out much better than I could have ever expected.
This is such a healthy alternative to frying foods in general. With a a rack and broiler pan your dish will come out as crispy and tasty as if you deep fried it!!!!!!
I recommend a much lighted breading. Too much cornmeal in my version made the exterior gummy instead of crisp, but it would’ve worked like fried catfish if the outside of the fish was lightly dusted…I’ll re-do next time.
Also, I marinated my fish as it soaked in the milk for better flavor… just salt, pepper, cayenne and garlic powder.
Definitely took longer than 10 minutes. I’d say 15-18 minutes is closer.
Grand kids loved the way it was cooked, They asked for seconds and they usually do not do that, i have made this may times. I did not use the red pepper kids don’t like it.
Extremely bland. The time to cook is way off (NJ). The outcome is a pile minced fish.
This recipe was quite easy to make. I had to substitute the cornmeal for a box of cornbread, because that is what I had on hand. The family loved the fish. Thank you.
