Ingredients
- 4 pork loin chops (about 5 ounces each)
- Salt and freshly ground black pepper
- 2 tablespoons peanut or olive oil
- 1 cup maple syrup
- 1 tablespoon Dijon mustard
- 4 cloves garlic, minced
- 2 teaspoons minced fresh ginger
- 2 cups frozen Brussels sprouts, thawed
Instructions
- Season both sides of pork with salt and black pepper. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add pork to hot pan and cook 2 minutes per side, until golden brown. In a medium bowl, whisk together maple syrup, mustard, 3 garlic cloves, and ginger. Add sauce to pan and bring to a simmer. Add chops to simmering liquid, cover and cook 5 minutes. Uncover and simmer 5 more minutes, until sauce reduces and pork is cooked through.
- Meanwhile, in another skillet, heat the remaining 1 tablespoon oil. Add the Brussels sprouts and the remaining minced garlic clove. Season with salt and pepper. Saute until heated through, about 5 to 7 minutes. Serve immediately.

This was outstanding. Pour some of that liquid in the sauce over the Brussels sprouts. Omgggg, perfection. I also served roasted baby potatoes with this meal. Husband loved it.

Everyone in the house loved the pork chops!!!
I only had 2 center cup pork chops so I halved the recipe. I used almost 1/2c of real maple syrup and added about 2 ounces of calvados (French Apple Brandy). I followed the recipe for the chops and the sauce was delicious. Would make again. Made a different recipe for the brussel sprouts.
This recipe did not turn out as I expected. In order to reduce the vinegar I needed to simmer the uncovered chops much longer than the suggested 2 minutes to thicken the sauce. That caused my pork loin chops to be less moist so I was very glad I had prepared an apple & onion topping from a different recipe because that saved the day. The brussels spouts were bland and dry although I added some sesame oil in addition to extra virgin oil along with green beans. I probably won’t use this recipe again.
It was tasty. I used 2/3 cup of maple syrup and 1/3 c bourbon. It was very nice. I probably added more ginger than called for, nonetheless, it was a nice touch. The ginger balanced the sweetness of the maple syrup.
This is a very delicious recipe…all the family really enjoyed it very much. I added mushrooms and green beans to the brussel sprouts since I wanted a little more veggies and it came out great!!!
