Louisiana Turkey Pull

Ingredients

  1. 2 tablespoons olive oil
  2. 1 large yellow onion, sliced (about 1 1/2 cups)
  3. 3/4 cup shredded carrots
  4. 1 red bell pepper, chopped (about 1 1/2 cups)
  5. 4 cloves garlic, crushed
  6. 2 teaspoons cayenne pepper
  7. 1 tablespoon ground cumin
  8. 2 tablespoons paprika
  9. 1 tablespoon chili powder
  10. 1 tablespoon dried oregano
  11. 1/2 tablespoon white pepper
  12. 6 turkey drumsticks, skin removed
  13. 3 (14-ounce) cans chicken broth
  14. Dipping Sauce, recipe follows
  15. 6 whole wheat pitas
  16. 3/4 cup apple cider vinegar
  17. 2 tablespoons honey
  18. 1/2 cup spicy mustard
  19. 1 teaspoon crushed red pepper flakes

Instructions

  1. Heat olive oil in a 10-inch nonstick Dutch oven over medium heat. Add onions, carrots and bell peppers and saute until soft, about 2 minutes. Add garlic and stir until well mixed. Add cayenne, cumin, paprika, chili powder, oregano, and white pepper; saute for 1 minute. Add the turkey legs and stir at least 30 seconds so that legs are completely coated in the spices. Cover with chicken broth and bring to a simmer. Reduce heat to low and cover. Cook for 4 hours or until meat is tender and separates easily from the bone. Shred the turkey drumsticks and toss the meat with the dipping sauce. Stuff the pitas with the turkey mixture. Serve immediately.
  2. In a medium bowl, mix all ingredients together. Cover and refrigerate for at least 1 hour so that flavors meld. Bring to room temperature before tossing the turkey in the sauce.

This recipe is a fantastic substitute for BBQ cravings. It’s so delicious and easy, but it takes advanced planning. I like to put it in corn tortillas with low-cal slaw. When making it from scratch you can add up your own nutrition information from the things you’ve added…oil has the info on the bottle and turkey nutrition info/ounce can be found online, there’s not much to it.

I absolutely love this recipe! I am going to make this again and again and again…..I made it with 6 pounds of chicken drumsticks instead of turkey and it tasted great. This is a good spicy, not too hot, not to little. My hubby and my 2 year old son loved it! It can be too hot for some other kids though.
