This is my go to recipe for lobster tails… It is so simple and so exquisite! I put several tails in the pan following the directions… the smaller the tail, the less time obviously. The tails always come out perfect.

I can not wait to try this recipe.  I live just out side of Albany, NY and border several New England states.   Yet I have never seen a 21-ounce lobster tail in any store or fish market.   Where would one be found?

I used Creole seasoning and lemon juice. The lobster tails came out WONDERFUL.

This was so easy to do, and the tails were so tender. I had two 4oz tails so I added much less water. I added a little bit of good olive oil and two dried red hot peppers. After 2 minutes I added 4 dozen little neck clams around the tails. When the tails were just done I removed them to the plate, cooked the clams 1-2 minutes more. WHAT A FANTASTIC DINNER!  (Just remember to “burp” the clams before cooking them. Cold water, clams and sprinkle with corn meal. They will open up and “burp” out the sand. Then rinse with cold water.)

I had to look up on YouTube how to butterfly a lobster tail. After that, this was so easy and enjoyable.
