Lamb Chops with Mint Almond Pesto

Ingredients

  1. 1 1/2 cups packed fresh mint leaves, from about 2 large bunches
  2. 1/4 cup sliced almonds, toasted
  3. 1 lemon, zested, plus juice of 1/2 lemon, about 2 tablespoons
  4. Kosher salt
  5. 1/4 cup extra-virgin olive oil, plus more for grilling
  6. 2 tablespoons water
  7. Freshly cracked black pepper
  8. 12 lamb rib chops, Frenched, about 2 pounds

Instructions

  1. Put the mint, almonds, zest, and a pinch of salt in the bowl of a food processor. Pulse until finely chopped. With the motor running, add the lemon juice and slowly drizzle in the oil until thick and smooth. Add about 2 tablespoons water until a thick but spreadable paste forms; continue adding water until desired consistency. Taste pesto and season with additional salt and pepper, to taste.
  2. Preheat a grill pan over medium-high heat. Generously drizzle the lamb chops with oil and season well with salt and pepper. Grill, turning once, 2 to 3 minutes per side for medium-rare; remove to a serving platter and let rest for 5 minutes before serving.
  3. Serve the grilled chops with mint pesto drizzled over the top.

Made this tonight (NYE) for the Hubby and I. It was delicious. I did add some Pecorino Romano to my pesto. Did not add the water. Served with Au Gratin Potatoes and Broccoli , yummy!

What kind of mint? We are never told whether to use spearmint or peppermint. None of the cooks on TV ever tell us what kind to use. Thank you

My husband will not eat lamp so I purchased lean 1/2 inch pork cutlets and pounded them a little and split in half. And of course because they had no bone to hold onto for a handle I skewered them and my husband and I loved it. I always told myself I did not like mint but I can now say it’s fantastic! It was wonderful with the pork and my husband even used the pesto on his brocolli. I’ll be making the “Couscous Salad with apricots and kalamari olives next. I’ll let you know how that goes. I used the pesto as a marinade as well and I agree that is Sooo the way to go! Really upped the taste and you can barely tell it was gamey. Loved it, will do it again.
