Kielbasa with Apple Caraway Sauerkraut

Ingredients

  1. 1 ring kielbasa, about 2 pounds
  2. 1 medium onions, chopped
  3. 1 tart green apple, cored, pealed and chopped into cubes
  4. 1 package sauerkraut
  5. 1 tablespoon caraway seeds
  6. 1 cup chicken stock

Instructions

  1. Preheat oven to 425 degrees. In a large oven-proof skillet over medium heat, saute kielbasa until browned, about 4 minutes on each side. Remove kielbasa to a plate and keep warm. In the same pan, saute the onion and the apple for 1 minute. Drain and rinse the sauerkraut and add it to the apples and onion in the skillet. Add the chicken stock and caraway seeds to the pan and stir. Return the kielbasa to the skillet and cover. Put covered skillet in hot oven and cook for 15 to 20 minutes.

So delicious. I added 1/4 cup dry sherry at he same time I added the chicken stock. Also halved 4 or 5 small new potatoes and placed around the kielbasa and on top of the sauerkraut in my 3 1/2qt. Cast iron enameled pot. Then 1/2 cup water just before putting in the oven with the lid on.  Braised for 40 minutes in order to cook the potatoes (425 degrees). All else the same. Heaven!

This was really good. I had a coouple of pounds of smoked sausage that we needed to give away. My friend is alergic to soy and got very sick when we ate the first of a package we got from the warehouse club. Amazingly the hillshire farms sausage has soy listed in the small print. I made this dish for a pot luck dinner. I didn’t have sauerkraut but I did have 1/4 of a red cabbage. I stir fried the cabbage, onion, and apple and added 1 tablespoon of balsamic vinegar to replace the tartness of the kraut. I don’t like kraut but I loved this!

This was a decent kielbasa and kraut recipe. The caraway seed was especially nice. The only notes I have for this recipe are: I wish the ingredients had listed the ounces of sauerkraut rather than just saying “package” (I ended up using two 14.5 oz cans and put a little vegetable oil in the pan (like 1 T before putting in the kielbasa. Otherwise, you’ll just have a burnt mess trying to move the onions, apples, and kraut around.

I’ve made this several times and everyone loves it. I substitute beer for the chicken broth and it comes out great.

This was a very simple recipe and the results were outstanding. It was the first time my fiance’ had eaten sauerkraut and he really enjoyed it.
