Ingredients
- 2 red potatoes, cubed
- 1 tablespoon dried rosemary
- 1 cup cubed ham
- 1 (8 or 9-inch) premade pie shell in foil pan
- 1 cup shredded Colby and Monterey jack cheese blend (recommended: Kraft)
- 3 eggs
- 1 cup milk
- 1 teaspoon all-purpose seasoning (recommended: McCormick)
Instructions
- Preheat oven to 400 degrees F.
- Place potatoes and rosemary in a microwaveable dish. Cover with a damp paper towel and microwave for 2 minutes, until almost cooked through.
- Cover the bottom of the premade pie shell with potatoes, ham, and cheese. Place on a cookie sheet and set aside.
- In a medium bowl, whisk together eggs, milk, and seasoning and pour into the pie shell.
- Place quiche into preheated oven for 35 to 40 minutes or until eggs have set.

Question… when it states to use a Premade Pie Shell do you bake it “before” adding the potatoes, ham, cheese, and eggs? I noticed some recipes state to cook the pie shell for 5 minutes before adding any ingredients..
This was quick and delicious! We ate it for breakfast, then dinner it was that good!
I loved it! The next time I make it I’ll use less rosemary my boys said it was a bit much ..but for very picky eaters they are it all!
I used Obrien potatoes and 4 eggs and 1/2 cup milk. Was amazing.
Delicious and very easy! I like rosemary, so it wasn’t too much for me. I also used a deep dish Pet Ritz crust as I had doubts a small would work while watching the show. I had five small red potatoes, and that was too much, so I have leftover rosemary potatoes for another day; so I think two medium would be too much. I only used enough for a single layer in the bottom of the shell followed by the full cups of ham & cheese. My potatoes needed to be nuked just a bit more, but it wasn’t a deal breaker; just a different wattage microwave on my end. Forty minutes of bake time with a 10 minute rest before serving was perfect. Served with a green salad for a quick and sumptuous feeling dinner after church. This is a good base recipe to play around with different stuffings. Looking forward to bacon, onion, & Swiss; as well as maybe broccoli & Munster? Lots of possibilities. Not sure why there were others who had issues, the directions were perfect on my end.
Mine was too watery way too much milk, didn’t like the rosemary either, I recommend half a cup of milk and a teaspoon of rosemary
QQ Very Tasty! Nothing left! You may have a tendency to add more ham or potatoes but don’t unless you use a deep dish pie shell. Quick/easy and delicious! Great recipe for leftover ham!
Truly awful.
Made the quiche yesterday. It is pretty tasty overall, but the rosemary is overpowering. Next time I will use less and use fresh rosemary as the dried is like eating little sticks. I also added one more egg and cut milk to a half cup.
Mine came out very watery. Is it because I used 2% milk instead of whole. I followed the recipe to a tee and was very disappointed.
