Grilled Apple Brined Pork Chops

Ingredients

  1. 2 cups apple juice
  2. 1 tablespoon coarsely ground black pepper
  3. 1/4 cup salt
  4. 1/4 cup light brown sugar
  5. 1 teaspoon red pepper flakes
  6. 5 rib end pork chops, about 1 1/2 pounds
  7. 1 tablespoon grill seasoning

Instructions

  1. In a large pot over medium-high heat, add 1 cup of water, apple juice, pepper, salt, sugar and red pepper flakes. Bring to a simmer making sure to stir occasionally to dissolve the salt and sugar. Remove from heat and add to a large bowl with 2 cups of ice.
  2. Once the brined has cooled add pork chops. Brine for at least 4 hours or up to 24 hours in the refrigerator.
  3. Remove pork from brine, rinse with cold water and pat dry with paper towels.
  4. Heat grill or grill pan over medium heat. Sprinkle 1 side of the pork chops with 1/2 the grill seasoning. Place chops on hot oiled grill, seasoned side down. Sprinkle the topside with remaining grill seasoning. Grill chops for 4 to 5 minutes per side. Let rest for 5 minutes before serving.

This is a simple but awesome brine for pork chops. I have used this in my catering business, grilling as many as 200 chops. Most folks say it is the best pork chop they have ever had.

Really like this marinade. Use it on pork tenderloin as well as chops. Usually half the recipe because there are only two of us. I buy individual apple juices and one or two of those will work without having to open a whole bottle. Highly recommend. I make it often and have shared with others.

This is super-flavorful and easy! I have never been a huge fan of pork chops because unless I use Shake and Bake, they are always too dry. But brining them makes them incredibly moist and tender. It’s a simple brine but the flavors are great. Perfect for summer grilling season

I have use this brine for pork chops as well as tenderloin. I agree with some of the reviews that is gets very salty if you brine too long. But I strongly recommend this to my friends and family. The pork melts in your mouth

I am getting ready to try this recipe for the first time.. and am very excited! I was curious if anyone has tried a similar apple-based brine using a hard cider instead of regular cider or juice.. Not sure if that would cause the pork to dry out or not.. I’ve seen similar recipe’s using hard cider, but they didn’t have any reviews as to how things turned out.. any advice would be appreciated!
