Ingredients

  1. 3 pounds grass-fed ground beef (antibiotic and hormone free)
  2. 2 cups homemade or store-bought tomato sauce, or ketchup
  3. 1 cup finely diced celery
  4. 1 cup finely diced onion
  5. 1/2 cup finely diced red or green pepper
  6. 1/2 cup molasses
  7. 2 tablespoons granulated garlic
  8. 2 tablespoons Worcestershire sauce
  9. 1 tablespoon ground black pepper
  10. 1 tablespoon Italian seasoning
  11. 2 tablespoons dried rosemary
  12. 1 tablespoon dried sage
  13. 4 cloves garlic, finely diced
  14. 3 slices whole wheat bread moistened with water
  15. 3 free-range natural eggs (antibiotic and hormone free)

Instructions

  1. Preheat the oven to 350 degrees F. Oil a 9 by 5 by 3-inch loaf pan.
  2. Combine the beef, 1 cup tomato sauce, celery, onions, bell peppers, molasses, granulated garlic, Worcestershire sauce, black pepper, Italian seasoning, 1 tablespoon rosemary, sage, fresh garlic, bread and eggs in a large bowl and mix thoroughly. Pack firmly into the prepared pan. Slam the pan open-side down on a sheet pan. Pat and form into a meatloaf. Put in the oven and cook 45 minutes. Remove from the oven. Spread the remaining 1 cup tomato sauce evenly over the top of the loaf. Sprinkle the remaining 1 tablespoon rosemary over the loaf. Return to the oven until the meatloaf reaches an internal temperature of 155 degrees F, about 10 minutes. Remove from the oven and set aside for 10 minutes. Slice and serve.

It was pretty good! It was on the sweet side-good with mashed potatoes! I’d make it again but spicy.

I think the proportions of spice are way off, as well. IF I every make this again I would reduce all spices!!

We watched this episode and were intrigued enough to try it. Proceed with caution! I think the proportions are off in this version of the recipe, and they left a few things out from the show (paprika and salt – how do you forget salt in ground beef? The version posted here is barely edible, way too much garlic, rosemary, sage, molasses and black pepper. Also, unless you like a little beef with your onion, I would cook down both the onion and garlic before adding it. There is potential here for a great recipe, but as posted it’s a dud.

Disgusting. Could not get the taste out of our mouth-
threw the recipe away.

Very tasty. Even my boys liked it. It had a bit of a kick to it.
Might need to reduce the liquid a bit, it stayed formed but only just.
I also cooked it in a casserole pan so the liquid would not spill over.
