Ingredients
- 1 whole-wheat English muffin, split
- 1 small tomato, seeded and diced
- 1 teaspoon extra-virgin olive oil
- 1 thin slice (1/2 ounce) Canadian bacon, diced
- 1/4 cup shredded part-skim mozzarella cheese
- Chopped fresh basil, for garnish
Instructions
- Preheat the oven to 450 degrees. Line a small baking sheet with foil.
- Place the English muffin halves cut-side up on the baking sheet. Top each with tomato and drizzle with the olive oil. Sprinkle the Canadian bacon over the tomatoes, then top with the mozzarella. Bake for 10 to 12 minutes, or until the cheese is melted and beginning to brown. Sprinkle with basil.

This is easy and delicious. I mixed the diced tomatoes and ham with the oil the night before, then put it on the muffins the next morning. I prefer cheddar cheese instead of the mozzarella. I didn’t have fresh basil so mixed some dried in with the ham and tomato mixture. Yum!
Very good! To make this healthier, I’d use Arnold 100% Whole Wheat Flax & Fiber Sandwich Thins! I’m a heart patient, and Canadian Bacon is a good choice…It has only half the fat and calories of regular bacon…AND it’s absolutely delicious!!!
I am obsessed with this recipe! I’ve had it for breakfast twice in a row and need to think of something to substitute it quick before I start eating it everyday and drive myself to hating it. I made it exactly as the recipe calls for minus the fresh basil for garnish. It’s super easy and allows me to quickly prepare it, throw it in the oven, and then hop in the shower. It’s then ready by the time I am. LOVE.

I have made this for my breakfast almost every day this week. It is simple and tasty. My husband liked it, too! The fresh basil is a must. I follow a diabetic diet, and this recipe is a very satisfying breakfast.
Pretty yummy. My family liked it a lot. One difference though, I used real bacon.
These were good. I made mine a little different because I’m vegetarian. I just used olive oil, dried oregano, tomatoes, and mozzarella. They were really good!
