Ingredients
- 1 teaspoon butter
- 2 teaspoons vegetable oil
- 2 cups celery, roughly chopped
- 1/4 cup onions, roughly chopped
- 3 tablespoons flour
- 1 1/2 cups chicken stock
- 1 1/2 cups heavy cream
- Salt and pepper to taste
- Pinch of dried thyme
- Pinch of dried oregano
- Pinch of dried tarragon
- 2 teaspoons celery seeds, toasted and ground
- Celery leaves for garnish
Instructions
- In a medium sauce pot, melt the butter with the oil and saute the celery and onion for approximately 1 1/2 minutes or until translucent. Add the flour and blend together to make a roux. Add chicken stock and bring to a boil and whisk until it becomes lightly thickened and vegetables are tender Add the heavy cream and blend well together with a mixer.
- Add the remaining ingredients and puree soup in a blender in batches. Serve garnished with celery leaves

Like someone else said, it is very stringy despite using an immersion blender. I see another celery soup recipe using a Vitamix…now I understand why! My husband and son liked this soup more than I did. I left out the dairy and instead used some potato to thicken the soup.
This is a terrific soup! So fast and easy! I used both heavy cream and half and half. Love the flavored and so does my family!
This recipe makes a fragrant, delicious celery soup and is just the thing to use up the rest of the celery when your last recipe only used one stalk! It is super rich if you use all that heavy cream, we usually dilute 50-50 with 2% or just use half and half. Probably best served as a side or appetizer as opposed to being the main course.
Neet time I’m gonna try this with half the celery seeds and use half & half instead of the heavy whipping cream…
Not great until you strain through a sifter, otherwise it is very very stringy…
We are on low carb diet and I was looking for a celery soup. This one more than filled the bill. I used low fat evaporated milk instead of the cream, whole wheat flour and butter cooking spray. Usually not my husband’s favorite but he thoroughly enjoyed this as did I. Will make again.
