Ingredients
- 2 tablespoons olive oil
- 1/2 red onion, thinly sliced
- 3/4 cup white wine
- 3 tablespoons orange juice
- 1 pound cod fillets
- 1 orange, peeled and coarsely chopped
- 1/2 cup pitted cured green olives
Instructions
- In a large skillet heat oil over medium high heat. Stir in red onion and cook for 2 minutes. Stir in wine and orange juice and bring to a rapid boil. Reduce heat and simmer for two minutes. carefully add cod fillets and season with salt and pepper. Cover and cook for 2 to 3 minutes. Stir in chopped orange and green olives. Serve hot with parsley-buttered rice.

I was a bit nervous witrh this one at first. The flavors are really interesting. Obviously, don’t use wine you wouldn’t drink. The salty olives balance with the sweet orange really nicely and the cod just takes on the flavor of what’s around it. I also used brown rice with parsley and butter instead of white. Since the cod is so light, I think this makes the meal a bit heartier and keeps you full longer. Besides… brown rice is healthy.
