Ingredients
- 4 sourdough demi-baguettes or rolls, halved lengthwise
- 4 slices provolone cheese, halved
- 1 1/3 cups caponata, recipe follows
- 1/4 cup olive oil
- 1 medium onion, chopped
- 1 celery stalk, chopped
- 1 medium eggplant, cut into 1/2-inch cubes
- 1 red bell pepper, cored seeded, and cut into 1/2-inch pieces
- 1 (14 1/2-ounce) can diced tomatoes with juices
- 3 tablespoons raisins
- 1/2 teaspoon dried oregano
- 1/4 cup red wine vinegar
- 4 teaspoons sugar
- 1 tablespoon drained capers
- 1/2 teaspoon salt, plus more for seasoning
- 1/2 teaspoon freshly ground black pepper, plus more for seasoning
Instructions
- Preheat a panini grill.
- Using a grapefruit spoon or fingers, scoop out a 1-inch wide trough along the cut sides of the baguettes. Place 2 half-slices of the provolone cheese on each bottom half of the baguettes. Spoon 1/3 cup of the caponata on top of the cheese. Place the top halves on the baguettes and grill the panini until the cheese melts, about 5 minutes.
- In a large skillet, heat the olive oil over medium-high heat. Add the onion and cook until translucent, about 3 minutes. Add the celery and eggplant and cook until soft, about 3 to 4 minutes. Add the red bell pepper and cook until crisp-tender, about 5 minutes. Add the tomatoes, raisins, and oregano to the pan. Simmer over medium-low heat, stirring frequently, until the mixture thickens, about 20 minutes. Stir in the vinegar, sugar, capers, 1/2 teaspoon of salt and 1/2 teaspoon of black pepper. Season, to taste, with more salt and pepper, if needed.

NO complaints. Easy to make. Yummy, yummy! SO great on a panini press because the bread gets so crispy! Served with a simple arugula salad. It doesn’t need anything else!
These look amazing and I definitely will make them as stated. However, I didn’t get to watch the show – how did Giada wrap and transport to keep them warm? I like that canned tomatoes were used.
Tasty and healthy. I’m so health conscious that I’d normally leave out the sugar but I left it in — Giada hasn’t done me wrong with many of her recipes I followed. It’s great now that it’s lent, what an easy recipe!

This recipe was delicious!! It was so easy too. The vegetable mixture is enough for two nights.
This caponata is a staple in our household!! I make it almost weekly. We serve it warm with a salad and a side of orzo… along side a wedge of room temperature egg and potato fritta or as an omlette filling. It’s mixed with warm pasta or served as a snack with rounds of cucumber or crackers. My husband likes it as a late night snack – on toasted bread – open faced with melted provolone cheese. I make it according to recipe… would not change a thing! As a vegetarian it is a great go to recipe. Thank you Giada!!

Left out capers (expensive for just a tbs and used 7 Kalamata olives for that briny addition. I find that everything can be adjusted to taste. Whenever anything has sugar in it and you are not a fan of sweet, experiment by adding only a tsp at a time and adjust according to your taste. I did, and it turned out great, the bones of this recipe is good.

This recipe is not only delicious,but so easy to make. It was a hit at my hair salon,when I brought them lunch the day of my appointment. I will be making more today for my opening
