Ingredients
- 1 (6-pound) beef brisket, trimmed of fat
- 1/2 cup BBQ spice blend, be sure and check sodium levels
- 4 cups water (1 cup cold, 3 cups hot)
- 1 tablespoon very finely ground coffee
- 1/4 cup dark brown sugar
- Freshly cracked black pepper
- 1/4 cup cider vinegar, preferably unfiltered
- 6 potato or dinner rolls, split
Instructions
- Rub the brisket generously with spice blend, cover with plastic wrap and let marinate overnight in refrigerator.
- Preheat the oven to 350 degrees F.
- Put the roast, fat cap up, in a roasting pan. Add 1 cup water to the pan and roast the brisket uncovered for 1 hour.
- In a medium bowl, combine the coffee, brown sugar, pepper, to taste, 3 cups hot water and cider vinegar.
- Remove the brisket from the oven, pour the coffee mixture over the brisket, cover with foil and braise until brisket reaches an internal temperature of 185 and is fork tender, about 3 hours. Remove to a carving board to let rest.
- Simmer the braising liquid in the roasting pan on the stovetop, skimming fat and allow to reduce just slightly or to desired consistency.
- Thinly slice beef across the grain. Dip the meat slices or the cut sides of the rolls in the reduced sauce. Make sandwiches with the meat and serve. Pour the remaining sauce into a small bowl and serve it with the sandwiches.

Super easy and tender and delicious! Thank Claire. I used a combination of McCormick’s grill mates Chipotle roasted garlic seasoning and Stubbs BBQ spice rub. Don’t forget to reduce the leftover juices or you’re missing out on some of the best flavor! We will definitely make this again.

Amazing! This was my first time making brisket and it was tender, juicy and the sauce was A-M-A-Z-I-N-G!! Made my own homemade rolls and the whole family loved it! making again very soon!
Hold on to your hats. This is the first beef roast I ever tried and it was a grand slam. I used a store-bought dry rub and added brown sugar. I couldn’t find a brisket so I used another cut of meat (I don’t remember what it was called and it was still great. It was 2 lbs rather than six but I still got 6 small sandwiches out of it. I like a lot of sauce and dipped the rolls like Claire did on the show, so I would probably make more of the braising liquid if I are using a larger piece of meat.
I’ve never been very good at cooking meat, but this was so easy and delicious! I’ve made it several times and it always turns out great! I buy briskets that are already trimmed and it’s much easier to deal with!

Delicious and Easy!
Delightfully flavory. I used instant espresso coffee. Even though my meat was half the size of Claire’s I used the full amount of liquid. I covered the pan with double foil tightly but almost all the liquid was gone when the meat was done. Luckily I had saved the liquid from the pot roast recipe so i used that to serve the brisket. Very delicious meal.

I am a long time Texas smoke man. I was really impressed by the flavor I was able to get in an oven cooked brisket! No left overs from this brisket! I thnik my smoker is gonna get a little less use! Great Job Claire!
