Ingredients
- 1 pound alligator loin meat
- 1 1/2 tablespoons blackening seasoning
- 1 tablespoon cooking oil
Instructions
- Pound alligator until slightly flattened. Season using the blackening seasoning. Cook in hot oil for approximately 4 to 5 minutes, turning constantly after the first minute. When cooked, drain excess oil. Serve sliced.

I made my own blackening rub, fried it up and when the brown sugar caramelized, pulled it out to serve but unfortunately nobody from New York would give it a try. So I ended up eating a whole pound to myself and enjoyed every bite.
