Baked Herb Stuffed Salmon

Ingredients

  1. Sea salt and freshly ground black pepper
  2. Extra-virgin olive oil
  3. 2 medium salmon fillets, about 2 1/2 pounds (1.1 kilograms) skin on, scaled and pin boned
  4. 2 lemons
  5. Bunch fresh marjoram
  6. Bunch fresh dill
  7. Bunch fresh basil
  8. Bunch flat-leaf parsley
  9. Handful stoned black olives

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C/gas 6). 
  2. Cut 5 lengths of string and lay them out on the work surface next to each another, leaving gaps in between. Sprinkle salt and pepper over the work surface, and drizzle with olive oil. Lay 1 salmon fillet, skin side down, on top. Sprinkle salt and pepper over the salmon, then, using a fine grater, grate the zest of 1 lemon over the top. On top of that lay the marjoram, dill, and basil, broken up, and the olives. 
  3. Season the flesh side of the other salmon fillet with salt and pepper, and grate over the second lemon. Place 1 fillet on top of the other, thin end to thick, then tie them together and trim the string. Put the fish parcel on an oiled baking tray, and scatter over any remaining bits of herb. Thinly slice the 2 lemons and place on top of and round the salmon. Drizzle with olive oil, then roughly chop the parsley and sprinkle over the top. 
  4. Bake in the preheated oven for about 20 minutes.

It’s really hard to mess up salmon, unless you overcook or burn it, because it’s a naturally flavorful fish with a distinctive taste. Salmon, with all the herbs and a wee bit of olive oil is so healthy. This recipe is so easy and quick to make, and it makes everyone “ooh and aah” when you bring it to the table whole. Also, I agree with the other review, I always cook Jamie’s recipes a little longer than he states (maybe it’s my oven?).

This dish is great to make, even if you’re a bit timid about preparing seafood ! Just use the 20 min. baking guide as a reference only..each time I’ve made it, it’s had to cook at least 30 mins. to ensure it’s done.

The herbs and lemon really make the dish — gets raves every time !
