Ingredients

  1. Cooking spray
  2. 2 large potatoes, peeled and cut into 1/2-inch thick slices
  3. Salt and ground black pepper
  4. 1 cup all-purpose flour
  5. 1 teaspoon baking powder
  6. 1/2 cup lowfat milk
  7. 1 large egg
  8. 1 1/2 pounds cod fillets, divided
  9. 1/4 cup cider vinegar
  10. 1 tablespoon honey
  11. Steamed spinach, for serving.

Instructions

  1. Preheat oven to 425 degrees F. Coat a large baking sheet lined with foil with cooking spray.
  2. Arrange potatoes on baking sheet and spray them with cooking spray. Season with salt and black pepper. Bake 25 minutes, or until golden brown and tender.
  3. In a shallow dish, whisk together flour, baking powder and 1/2 teaspoon of salt. Whisk in milk and egg. Add cod fillets and turn to coat with batter. Add cod to a baking sheet that’s been lined with foil and sprayed with cooking spray and bake 8 to 10 minutes, until golden brown and fork-tender.
  4. In a small bowl, whisk together vinegar and honey to serve as a dipping sauce. Serve 1 pound of the fish and all of the potatoes with this meal. Reserve 1/2 pound fish for another recipe.
  5. Serve with 4 cups steamed spinach.

I read the reviews but wanted to try it. I tweaked it and used half flour, half panko bread crumbs. I also used just milk what was listed at room temperature instead of cold. I also let it rest a little, I wondered if the baking powder, gluten and salt needed time. It wasn’t gloppy, but it wasn’t crispy, crispy. I baked it on a cookie cooling rack on top of the sheet pan. I wonder if 1/2 the milk and use seltzer (whatever fizzy stuff) instead of water would make it work? Somebody at food network needs to make a video of this recipe really works. I also made sure I thoroughly dried the fish.

If you want to ruin a perfectly good piece of fish, then this is the recipe for you! This is a terrible recipe and should be removed from the site! Worst batter recipe ever!

The potatoes came out very very well…. added a pinch of onion powder to them too. I didn’t even have to turn them over and since i used cooking spray on them and the foil on the pan they didn’t stick! Yay :
I took another person’s advice and added 1/4 cup of milk. The batter did resemble pancake batter which is fine. We love pancakes in this house hahahah but that means I chose to fry them in half veg half olive oil instead of baking them. I figured I baked the “french fries” so i could cheat on the fish. I used wild flounder instead of cod. Came out perfect. I did cut the pieces small like 4 pieces per fillet and let them fry for 2 minutes each side. I say try it you might like it :

Baked the fish as per recipe… not good at all! Batter is doughy and tasteless. Not worth the effort.

The potatoes were better than the fish. The batter didn’t get crispy – it was doughy even though I kept the fish in the oven for extra time – and I used a convection oven! It wasn’t bad – just not very good.

Worst recipe ever! I even added 1/4 c. extra milk and 1 extra egg along with salt, pepper and paprika to flour mixture. Fish ended up smothered in a pancake like batter and didn’t get crispy or brown. Scraped off batter and had to be creative to save dinner!

I would have given this no stars if able. There’s something wrong with the batter recipe. It’s so thick, like pancake batter. I tried to fix it by adding milk; no go. It was just way too much flour.

If you end up stuck like I was, you could try what I did: I dipped the fish in milk, then coated them in Italian breadcrumbs. I baked them in a 400 degree oven for 20 minutes. It was delicious! Good luck!

I really enjoyed the concept of the baked fish and chips recipe. It was very quick and easy. I was, on the other hand, a bit disappointed with the batter portion of the recipe. But again the concept of quick and easy and variety really helps when you are a stay at home dad who needs simplicity.
