Ingredients

  1. 4 cups prepared chicken stock, plus 2 tablespoons
  2. 1/2 teaspoon grated fresh ginger
  3. 1 tablespoon soy sauce
  4. 1 tablespoon cornstarch
  5. 2 eggs, lightly beaten
  6. 2 green onions, chopped, including ends
  7. Salt and white pepper, to taste

Instructions

  1. Bring soup stock, grated ginger and soy sauce to a boil. In a small cup, make a slurry by combining the cornstarch and 2 tablespoons of chicken stock. Stir until dissolved. Slowly pour in the cornstarch mixture while stirring the stock, until thickened. Reduce heat to a simmer. Pour in the eggs slowly while stirring the soup in the same direction. The egg will spread and feather. Turn off the heat and add the green onions. Season with salt and pepper, and serve immediately.

A good recipe all in all but to make it more to Asian tradition add 1/2 teaspoon sesame oil, 1/8 teaspoon sugar, 1/2 teaspoon turmeric, 3 tablespoons cornstarch, 3 eggs, and an extra tablespoon soy sauce.

Very good. Use good quality chicken bone broth and added grated clove of garlic, a teaspoon of sugar, half teaspoon sesame oil and chives and green onions.
