Adobo Quesadilla Burger with Grilled Corn Salsa

Ingredients

  1. 2 pounds ground chuck
  2. 3/4 cup black beans
  3. 1/2 cup chopped cilantro leaves
  4. 1/2 cup grated onion
  5. 3 garlic cloves, pressed
  6. 2 tablespoons adobo sauce
  7. 1 tablespoon ground cumin
  8. 2 teaspoons seasoned salt
  9. 1/2 teaspoon black pepper
  10. 3 to 4 tablespoons vegetable oil, for brushing on the grill pan
  11. 1 ear corn on the cob
  12. 1/4 cup red onion, diced
  13. 2 tablespoons chopped cilantro leaves
  14. 2 tablespoons chicken stock
  15. 2 tablespoons pineapple juice
  16. 1 teaspoon ground cumin
  17. Dash hot sauce
  18. Salt and freshly ground black pepper
  19. 6 large tortillas
  20. 6 slices queso fresco cheese
  21. Toothpicks
  22. Cilantro leaves, for garnish

Instructions

  1. Preheat grill pan on medium-high.
  2. To make the patties, combine the chuck, beans, cilantro, onion, garlic, adobo, cumin and seasoned salt and pepper in a large bowl. Mix to combine, handling as little as possible. Shape into 6 patties. Loosely cover with plastic wrap and set aside.
  3. To prepare the corn topping, brush grill pan with 1 tablespoon oil. Grill 1 ear of corn on grill pan until golden and has grill marks. Transfer to cutting board and allow to cool a bit. In a medium bowl, combine red onion, cilantro, chicken stock, pineapple juice, cumin, hot sauce and salt and pepper. Cut corn off of cob and toss with mixture. Transfer mixture to a sheet of foil and wrap to keep warm.
  4. Brush grill pan with 1 tablespoon additional oil. Place the patties on the pan and cook, turning once, until done to preference, 5 to 7 minutes on each side for medium. Remove burgers from pan and place on platter.
  5. On each flour tortilla, layer burger, queso fresco and an equal amount of corn topping. Fold in sides of tortilla and roll like a burrito, securing with toothpicks. Brush grill again with oil. Place each tortilla wrapped burger on grill and grill until tortilla is golden brown and crispy.
  6. Cut in half diagonally. Garnish with cilantro leaves. Serve immediately.

What do you do with the Queso Fresco Cheese? The recipe calls for it but what do you do with it. Does it go on the Burger during the grilling.

Made this for dinner today. I forgot to buy the queso fresco cheese so I used Montery Jack instead as that was what I had on had. I also made the flour torillas from Melissa D’Arabian. It was great. I cooked it on the George Foreman grill since it is cold here.

I was bored with having the same burgers over and over again so I tried this one out because it appealed the most to me. It was excellent and very satisfying.

I did change one step. Instead of putting the black beans in the burger I added it to the corn mixture. This burger recipe is a keeper and I’ll make it over and over again.

I didn’t have any adobo sauce, and I used frozen corn instead of corn on the cob and it was still so yummy!! I loved it, and so did my husband and son. DO NOT make this without the corn salsa or the cheese!! The corn salsa is what makes this! The blend of the spices and the corn salsa is heavenly! We will be making this often, especially when grilling season gets here!

We tried the burger and I must say it is not your everyday burger, It is better, You have a winner of a recipe here! I enjoyed your show; you along with all the competitors did a marvelous job! The balance of flavor was brillant in your burger! I grilled the ones I made and it just brought out the flavor even more. This is a 5 star burger!

I watched the show and tried this burger showdown recipe first and was I glad I did. My sister and husband had seconds and said they can’t wait until I make it again (which will be soon). I have found myself thinking of the spectacular flavors involved in this dish and can only say the she did a wonderful job. I highly recommend this burger recipe and have already made copies for friends to try.
