Italian Tuna Salad

We like to replace mayonnaise with heart-healthy olive oil in our tuna salad.

Ingredients

  1. 4 sun-dried tomatoes
  2. 1/4 red onion, minced
  3. 1 (12-ounce) can solid white albacore tuna in water, drained
  4. 1 rib celery, chopped
  5. 1/4 cup pitted nicoise olives
  6. 1 tablespoon capers, rinsed
  7. 2 tablespoons extra-virgin olive oil
  8. 1 teaspoon finely grated lemon zest
  9. Juice of 1/2 a lemon
  10. 2 tablespoons chopped fresh basil leaves
  11. Kosher salt and freshly ground black pepper
  12. Serving suggestions: whole grain bread or bountiful greens.

Instructions

  1. Cover the sun-dried tomatoes with hot water in a bowl. Set aside until soft, about 20 minutes, then drain, chop, and put in a medium bowl. To mellow the minced onion, soak it in cold water for 10 minutes, then drain it well, pat dry and add to the tomatoes. 
  2. Add the tuna, breaking it into large chunks, along with the celery, olives, and capers, and toss to combine. Add the olive oil, lemon zest and juice, and basil and toss again. Season, to taste, with salt and pepper. Serve cold, with bread or greens, if desired.

Loved this version! So much lighter than mayo, and healthier too! Full of flavor. I substituted sun-dried tomatoes in olive oil for the dried, scallions for the red onion, as well as an “olive salad” for the olives. Instead of the EVOO, I used the olive oil from the sun-dried tomatoes. Yum!

the colors are gorgeous and the tastes are fresh and lively. what a nice alternative to those mayo laden tuna salads.
i think the “weird” taste the previous poster was referring to was the lemon zest.
personal preference – i think it makes the dish pop but you could omit it.

I started cooking about 1 year ago and love cooking! I like trying new things. I wanted to try a different kind of salad to go with a small dinner. This was so simple, delicious, fresh, tasty and filling. My husband didn’t get to his meal and just ate the salad. If you are trying to eat healthy but cannot find ways to incorporate tuna, this is great. I put it on top of romaine lettuce to make it extra salad-y. Enjoy!

This is a completely different tuna salad than mayo-heavy version I grew up with, and I’m so happy I tried it! It’s light, colorful and full of flavor. I didn’t have celery and I used black olives instead. Will definitely make this again!

Due to heart problems, we had to change our way of eating completely-
