Homemade Tomato Soup

Ingredients

  1. 1 (14-ounce) can chopped tomatoes
  2. 3/4 cup extra virgin olive oil
  3. Salt and freshly ground black pepper
  4. 1 stalk celery, diced
  5. 1 small carrot, diced
  6. 1 yellow onion, diced
  7. 2 cloves garlic, minced
  8. 1 cup chicken broth
  9. 1 bay leaf
  10. 2 tablespoons butter
  11. 1/4 cup chopped fresh basil leaves
  12. 1/2 cup heavy cream, optional

Instructions

  1. Preheat oven to 450 degrees F.
  2. Strain the chopped canned tomatoes, reserving the juices, and spread onto a baking sheet, season with salt and pepper, to taste, drizzle with 1/4 cup of the olive oil and roast until caramelized, about 15 minutes.
  3. Meanwhile, in a saucepan, heat remaining olive oil over medium-low heat. Add the celery, carrot, onion and garlic, cook until softened, about 10 minutes. Add the roasted chopped canned tomatoes, reserved tomato juices, chicken broth, bay leaf and butter. Simmer until vegetables are very tender, about 15 to 20 minutes. Add basil and cream, if using. Puree with a hand held immersion blender until smooth.

Really good. Tasted restaurant quality. It made two mugs of soup. Perfect for a light lunch for my husband and me, but we would have eaten more of it if it had it yielded more. Better for our diets, I guess. I will definitely make it again. As others have done, I reduced the amount of olive oil for mirepoix.

I’ve made many different recipes for tomato soup.   This is the only one I’ve used for years, it’s the BEST.   Few  ingredients, easy to prepare.  The addition of the cream and basil at the end put it over the top.

Very easy and very simple to follow. I used 2 cans of fire roasted tomatoes and unsure how much chicken broth. I did add a small amount of agave nectar to cut the acidity.
