Ingredients
- 2 pounds Yukon gold potatoes
- 2 tablespoons canola oil, plus more for grill
- 2 teaspoons smoked paprika
- Kosher salt and fresh cracked black pepper
- 1 cup small diced celery
- 1/2 small red onion, finely diced
- 1 tablespoon minced fresh cilantro
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 teaspoon yellow mustard
- 2 teaspoons chopped capers
- 1/2 lemon, juiced
Instructions
- Preheat a grill to medium heat. Oil the grill grates well.
- Slice the potatoes lengthwise into 3/4-inch thick slices. Place the potatoes in a bowl and add the oil, paprika and season with 2 teaspoons salt and 2 teaspoons pepper. Toss to coat.
- Place the potatoes on the grill and cook until slightly puffed and nicely golden brown on both sides, 20 to 30 minutes, turning 90 degrees after 5 minutes and flipping and repeating on the other side. Remove and allow to cool completely. Dice into 3/4 to 1-inch pieces.
- In a large glass bowl, add the diced potatoes, celery, red onions and cilantro.
- In a medium glass bowl, add the sour cream, mayonnaise, mustard, 1 teaspoon salt, 2 teaspoons pepper, capers and lemon juice. Adjust the salt, as needed.
- Fold the mayonnaise mixture into the potato mixture, cover and refrigerate for 20 to 30 minutes. Stir and adjust seasoning as needed.

We are watching the video of this recipe with my 4 y old daughter; she is getting so excited: look he is cooking all by himself (vs tasting food in triple d) and asks me if this is his house for real!! I am definitely going to try grilled potato for salad! Sounds yummy!
unique tasting potato salad. The roasted potatoes before the salad dressing tasted very good, almost better than the potato salad. I think I will use the roasted potato recipe again but not sure about the potato salad. I thought this would knock my socks off but it didn’t it.
Best potato salad ever! My yukon potatoes were on the small side and wouldn’t do well on the grill so I followed others advice and baked them. 425 degrees for 20 min was perfect. Great smoky flavor and the capers add a nice tang to it. I only added a small squirt of fresh lemon rather than 1/2 lemon as the recipe called for, and it was plenty. Great recipe!!
BEST POTATO SALAD EVER! Took a gamble on this recipe and made a 5# batch – wasnt sure what to expect but Everybody agreed it was the BEST POTATO SALAD EVER! A HUGE hit with our party!!!! Not a fan of capers but they really added a nice twist! Along with the lemon (fresh, not bottle really gave it a nice, fresh ending on your taste buds. Added a little Cayenne and SHAZAM! Definite keeper! Great job Guy!
Very good. Easy to make. I skipped the grill and roasted my potatoes, already tossed in the oil and spices, and cut into bite sized chunks, at 400 for 25 minutes. Perfect. I also assembled the dressing all at once in a big bowl, then added my warm potatoes to the dressing so that the flavors would be absorbed. This was a super-quick dish to put together, and the capers are The Bomb. Great twist. Will make again.
This is the best potato salad ever. Everything from the seasonings on the potatoes to the dressing works together and is absolutely delicious.
