Ingredients

  1. 1 store-bought pizza dough
  2. Olive oil, for brushing and drizzling
  3. Kosher salt and freshly ground black pepper
  4. 1 pound fresh mozzarella, sliced 1/4-inch thick
  5. 3 Roma tomatoes, sliced 1/4-inch thick
  6. Handful fresh basil leaves

Instructions

  1. Prepare the grill for direct and indirect cooking. 
  2. Once the grill is hot (you can hold your hands an inch over the grates for no more than 2 seconds), stretch and shape the dough into a 12-inch round on a flat surface. Brush the top with oil, salt and pepper and toss on the grill, oil-side down. Cook until the bottom is golden brown, 1 minute. Check the bottom of the dough to see if it is getting browned. If it is on one part, but not the other, use a spatula or tongs to rotate the dough 90 degrees and cook for another minute. If it is still not beginning to brown, cover the grill and continue to cook a minute at a time until the bottom has browned evenly. (It should only take a couple minutes if you have a hot grill.) The top of the pizza dough will also start bubbling up with air pockets. 
  3. Once the pizza dough has browned on the bottom, flip over and grill until golden brown and the dough is just firm, another minute or so. Remove to a sheet pan. Cover the grill so it retains the heat for the next step. 
  4. Drizzle the top with more olive oil. Put the mozzarella and tomato slices on top and season with salt and pepper. Return the pizza to the grill on the sheet pan, cover the grill and cook for 3 or 4 minutes to melt the cheese. Remove from the grill and tear the basil leaves over the top. Slice and serve immediately.

I use (and love!) this recipe, but always wonder: Is the pizza dough supposed to be oiled on both sides when pre-cooking on the grill? If not, which side are you supposed to put the toppings on? The side that was oiled or the side that was not?

I’ve been making pizza on my grill for years but I generally use my grill as an oven and use a pizza stone or cast iron on the grill.    Following the recipe to a tee, I really liked the flavor imparted by the charcoal.    However, if you happen to have a gas grill or just don’t feel like lighting the charcoal grill, I’d skip the dough on the grates step and cook the dough directly on a stone or cast iron pizza pan (using a peel).   (do pre-cook the dough before topping).   I just happen to think that doing all the cooking on a stone was superior when using my gas grill.    If you’re going with charcoal, the recipe is great exactly as written.

Best margarita pizza ever! Use as an appetizer or pile on more goodies for a main course, but don’t even think about having left overs. If people have never had grilled pizza, it’s fun to watch their reaction when you put the dough on the grill and their delight when it turns out perfectly. Shaping the raw dough to look pizza-like takes some experience, but fortunately, the shape doesn’t matter. A kidney shaped pizza tastes just as good as a round one!

This is a must try if you are looking for an easy way to make an outstanding meatless pizza using a bought crust (I used Boboli, and it was great). Works fine baking in the oven instead of on the grill, if you want to go that way.
