Beer-Simmered Bratwurst

Ingredients

  1. 6 cups German light ale
  2. 1 tablespoon caraway seeds
  3. 1 tablespoon coriander seeds
  4. 1 tablespoon mustard seeds
  5. 3 large onions, unpeeled, roughly chopped
  6. 2 whole cloves garlic, smashed
  7. One 3-inch piece fresh ginger, peeled and chopped
  8. 3 pounds precooked bratwurst, pricked with a fork
  9. 2 tablespoons canola oil

Instructions

  1. Preheat the grill for direct grilling, high heat. 
  2. Combine the beer, caraway, coriander, mustard seeds, onions, garlic and ginger in a large stockpot. Then, add the bratwurst. Place the pot on the grates of the grill and bring to a simmer. Simmer the sausages until half-cooked, about 5 minutes. Remove the pan from the grill and let the bratwurst sit in the liquid for 30 minutes. Transfer the brats to a platter or cutting board and strain the liquid into a bowl, discard the solids. 
  3. Brush the sausages with canola oil and grill until the casings are crisp and golden brown and the sausages are cooked through, 4 to 6 minutes per side. Keep warm until serving.

Delicious! Don’t discard the solids of the beer after boiling though, that’s a huge waste! The onions and spices can be strained out of the beer and sauteed to serve with the brats. Save the beer to make the most savory beer bread you’ve ever imagined. Trust me, it works for me every time!

Great recipe this is the Second time I will be making it & to those folks who don’t “poke” the Brats how else does the beer get into the Brats! When ever it comes to Grillin I always go t BOBBY FLAY. “Diane the Alte Cook” means old!!!

These were absolutely delicious!  They were also super simple to cook.  The beer was a bit on the pricey side but I was told it does not have to be “German Ale”, that any light ale will do……is that correct?  The only other question I have is what are you supposed to do with the juice you strain?
