Tropical Fruit Parfait

Ingredients

  1. 2 cups nonfat vanilla yogurt (recommended: Dannon Lite and Fit)
  2. 2 teaspoons lime juice
  3. 1 pinch cayenne pepper
  4. 1 (15.25-ounce) can tropical fruit salad, drained (recommended: Dole)
  5. 1 banana, sliced
  6. 1 cup cinnamon granola cereal
  7. Fresh mint sprigs, for garnish

Instructions

  1. In a small bowl stir together yogurt, lime juice, and cayenne pepper; set aside.
  2. Spoon 1/4 of drained fruit into the bottom of 2 wine or parfait glasses. Add 1/4 of the banana. Spoon 1/4 cup yogurt mixture over fruit and top with 1/4 cup of granola. Repeat layers.
  3. Serve immediately garnished with a sprig of fresh mint.

I make this all the time with fresh fruit, melon, grapes, strawberry, banana’s. I would think the cayenne pepper would be too spicy for kids, you used a whole teaspoon on the show! I also stir the granola into the mixture.

When I started the recipe, I realized the one on-line did not have all the ingredients Sandra used on her show. I tried to remember what she used so I added nutmeg and cinnamon to the recipe that was on-line. The result was a very good (low-fat) dessert. I’ll use this one again.

I accidentally added to much cayenne and it still came out quite yummy! It made it to warm for my kids but the adults enjoyed it.
