Sweet Potato Waffles

Ingredients

  1. 1 1/2 cups peeled and cubed sweet potatoes
  2. 2 cups all purpose flour
  3. 1 tablespoon baking powder
  4. 1/2 teaspoon salt
  5. 6 egg whites, at room temperature
  6. 1 cup milk
  7. 1/4 cup firmly packed light brown sugar
  8. 1/4 cup butter, melted
  9. 1 tablespoon grated orange rind
  10. Vegetable spray, for waffle iron
  11. Special equipment: steamer basket and waffle iron

Instructions

  1. Put cubed sweet potatoes in a steamer basket. Place the basket in a large pot of simmering water that is no closer than 2 inches from the bottom of steamer. Allow potatoes to steam for 20 minutes of until fork tender. Mash cooked potatoes and set aside. 
  2. In a large bowl, whisk together flour, baking powder, and salt and set aside. 
  3. In another bowl combine the sweet potatoes, milk, brown sugar, butter, and grated orange rind. Stir the sweet potato mixture into the flour mixture and thoroughly combine. Beat egg whites until stiff peaks form. Gradually fold egg whites into batter 1/3 at a time. The batter will be thick. Using a No. 20 disher (scoop), place 2 scoops of batter onto a preheated, oiled waffle iron, and cook until lightly browned, about 5 to 6 minutes.

Super good with Aldi sweet cream butter.
I did make some changes. I always do!
Swaps: used buttermilk vs whole milk
Used 1/2 and 1/2 all purpose flour and 7 grain flour.
Used canola oil instead of butter. Used butter on the finished waffles.
Additions:
1 tbsp malt flour
2 tbsp ground golden flax
1/2 tsp cream of tarter while beating the eggs
6 egg yolks added in although the recipe only said egg whites. I did separate and beat egg whites only
About 1/2 to 3/4 cup additional water.
Cooked for two cycles on my waffle iron.
Yea am a waffle nut. I have almost 20 different waffle irons. These are some of the best waffles I have ever had. My add a bit of cinnamon next time.
Change in method: I baked the whole baked potato in the microwave until thoroughly done. Then cut open right away to let steam out, peeled and put in potato ricer for mashing.

This recipe is incredible!!  My variations include:  a considerable amount of freshly grated ginger,  grated orange peel from one large orange, freshly ground black pepper.  I substituted buttermilk for the milk, and did not separate the five eggs.  I used unbleached cake flour in place of regular flour.  They were perfect, fluffy and absolutely delicious!

Ok so I only had canned ‘star’ ingredient. Annnd a lime for zest was the only citrus to be had. I added a splash of ginger juice. Soooooooo delicious. Alton rules!

These waffles are sweet, moist, and delicious, like Susan comments below. But we can’t taste sweet potato. We taste orange, from the grated orange rind.

These worked great in my Micky Mouse waffle maker. We are dairy free so I used coconut oil, almond milk and coconut sugar instead of brown sugar.  They were fluffy and delicious.
