Sweet Potato Ice Cream

Ingredients

  1. 1 (15-ounce) can sweet potato puree
  2. 1 1/2 cups cold half-and-half
  3. 1/4 cup dark beer
  4. 3/4 cup packed light brown sugar
  5. 1/2 teaspoon ground cinnamon
  6. 1/4 teaspoon ground ginger
  7. 1/2 teaspoon ground allspice
  8. Pinch salt

Instructions

  1. The day before you make the ice cream freeze the ice cream insert for a full 24 hours.
  2. Add the sweet potato puree to a large bowl along with the half-and-half, beer, light brown sugar, cinnamon, ground ginger, allspice, and salt. Whisk together until smooth. Cover with plastic wrap and chill the mixture thoroughly before churning.
  3. Churn in your ice cream machine until it freezes to a soft frozen state, about 20 to 25 minutes. Put in the freezer to continue to firm up until you are ready to serve.

Thanks to all the other posts, it came out perfect! I doubled the recipe and opted to make a caramel rum sauce with waffle cones. Excited to share with my friends and family!

I used 15.9 oz can of sweet potatoes in syrup and pureed them. Not sure if that was enough “sweet potato” to make the ice cream super sweet potatoey. If I did it again, I’d probably make a homemade puree to make sure it tasted more like sweet potatoes. Also, I’d use less than half of the Allspice required. The all spice made this very pumpkin pie-ish, which is not what I was going for since I was serving it after BBQ ribs on Fathers day. This exact recipe would be perfect for thanksgiving time. For a BBQ meal, drastically reduce allspice.

I agree with the other review that it’s not creamy and more crystalized but it was still really tasty. I paired it with a homemade bourbon caramel sauce and it was loved by all. :

I couldn’t find sweet potato puree, so I bought sweet potato pie filling. It was really tasty with the other ingredients! Even though I made this in the Spring, I think it would be awesome in the fall.

I altered the recipe as follows: non fat half and half, 1/4 cup plus 2 tbsps Splenda brown sugar blend. Everything else remained the same.My beer probably is lighter than the recipe called for but I think it will be ok. And fortunately Sprouts Market has sweet potato puree during this season. It makes 32 oz (1 qt. My bf and I are both watching sugar and fat calories so I enjoy the challenge of taking full calorie recipes and reducing the calorie count without sacrificing flavor. I tasted this and it tastes very good. Tomorrow I’ll put it into the ice cream maker.

I did not like this recipe. It was not creamy like many ice creams, but more crystallized (maybe the alcohol in the beer caused this by raising the freezing point?) I also couldn’t find canned sweet potatoes, so i baked my own, and pureed them in a blender. Maybe this is where I went wrong, but I will not be making this again.

I would have never thought to make this,but it was really good. I didnt ad the beer (didnt have any) still it was really good. I felt like i was eating pie without the crust. yummy!

Saw the show when they made the sweet pootato Ice cream and I was like THEY ARE CRAZY. Man let me tell you I was so wrong. MY MY MY this ice cream is SO SO SO good. I made it a good friend of mine and my partner for his B Day and he loved it. The recipe was easy to follow and who would think of dark beer in ice cream wow. Five stars from me.
