Strawberry Soup

Ingredients

  1. 2 cups hulled and sliced fresh or (thawed) frozen strawberries
  2. 1 cup orange juice
  3. 1 cup vanilla yogurt
  4. 1/2 teaspoon vanilla extract
  5. Whipped topping, as needed
  6. Fresh mint sprigs, optional

Instructions

  1. In a blender, combine all the ingredients but the whipped topping and mint and process until smooth. Ladle the soup into bowls and top with a dollop of whipped topping. Garnish with mint, if desired.

I love this recipe! I could only do a half recipe. I was looking through my refrigerator and couldn’t find any vanilla yogurt, so I used plain yogurt and the full amount of vanilla concentrate and it worked out very well. The bitterness of the plain yogurt gave it a very slight Indian flavor, which worked very well. I will make this again!

This strawberry soup wasn’t as good as I hoped. It tasted sour and the orange juice really was a dominant flavor. I had to add some sugar to make it taste better. It was simple to put together, but I won’t be making it again.

Wow! So easy and everyone at dinner loved it! I have a juicer so I made fresh orange juice for this and I think that really makes a difference. Just cut the strawberries before you start preparing dinner and put them in the freezer, peel the oranges and put them in the fridge. After dinner it takes about 5 minutes to make this and its an amazing desert! (*Homemade whipping cream tastes great with this! Refreshing! I too added some sugar as it was a little tart for my tastes. I also read the other reviews and add the orange juice in batches to keep the strawberry flavor prominate. I also saw another recipe that added a little white wine which added a nice flavor. I thought it was a refreshing start to dinner while my husband thought it should have been more of a dessert course.
