Ingredients
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon black pepper
- 2 teaspoons kosher salt
- 1/2 cup extra-virgin olive oil, plus 1/4 cup
- 1 loaf sourdough bread, cut in 1-inch cubes
- 1/2 cup sherry
- 2 tablespoons honey
- 1 cup fresh strawberries, sliced
- 4 Roma tomatoes, chopped
- 1/2 cup blue cheese, crumbled
- 1 orange, zested
- 1/4 cup sliced red onion
Instructions
- Preheat oven to 300 degrees F.
- In a bowl, combine garlic powder, onion powder, pepper and salt. Drizzle 1/2 cup olive oil on bread and add to the seasoning mixture. Toss thoroughly. Place the bread cubes on a baking sheet and bake for 20 minutes or until golden brown. Remove from oven and let cool.
- In another bowl, whisk together the sherry, remaining olive oil and honey. Set aside.
- In a large mixing bowl, toss cooled bread cubes, strawberries, tomatoes, blue cheese, orange zest, onion and sherry dressing. Try to coat each bread cube with the dressing.
- Serve immediately.

The dressing is quite strong in my opinion but still very delicious- was a big hit.
I like the combination but I think the seasonings on the croutons were too strong. Next time I will combine this recipe with a traditional panzanella recipe that I like the croutons from and see how it turns out. Also, I substituted feta for the blue cheese and that worked well. I was a bit skeptical of combining the strawberries and orange zest with tomato and onion but I thought that worked very well.
I thought this was an incredible mix of flavors. The tangyness of the cheese and dressing mixed with the sweetness of the strawberries is out of this world. I made it with a little less croutons and serve it over a spinach salad with grilled chicken. I have made it for several occasions and everyone raves about it. The dressing alone has become one of my absolute favorites, I use it on a variety of salads, vegetables and as a marinade.
I am not sure what all the hate is about either? I absolutely loved this recipe and got raves about it too. Love strawberries & blue cheese combo on spinach salad and this was a new take with similar flavors.
I did cut back on the salt, garlic & onion powder on the homemade croutons so it would not be so salty.
But this is an amazing dish and great complement to pasta dinner instead of traditional green salad. Don’t listen to the bad reviews!! YUMMY YUMMY
This was just awful. It looked pretty but the flavors just didn’t work together.
I served this at a party and received rave reviews. Not sure what all the hate is about. Even people who don’t like strawberries loved it.
Who knew that red onions and stawberries would taste so good together!
We like trying new recipes and flavor combinations. We did not like these flavors together. The proportions seem to be off…and his inspiration from the classic combination of strawberries, balsamic vinegar and marscapone cheese is sooooo much better.
this was worth trying. I used an artisan loaf of bread from COSTCO and then followed the recipe…it was great. Served it with spinach, garlic and sundried tomatoe stuffed pork roast and a nice Alaskan amber beer.
