Stewed Fresh Berries

Ingredients

  1. 3 half-pints fresh raspberries, divided
  2. Half-pint fresh blueberries
  3. 1/4 cup sugar
  4. 1/4 teaspoon orange zest
  5. 1/3 cup water
  6. 2 teaspoons framboise (raspberry brandy), optional

Instructions

  1. Combine a half-pint of raspberries, all the blueberries, sugar, zest and 1/3 cup water in a saucepan and bring to a boil. Lower the heat and cook uncovered over medium-low heat, stirring occasionally, for 8 to 10 minutes. The juice will become a syrup and the berries will be slightly cooked. Off the heat, stir in the remaining raspberries and the framboise, if desired.

I subsituted the sugar for stevia, I use an Australian brand and used an exact measurement 1/3 (some brands require more or less) and it was fabulous. I also used 2 stalks of rhubarb as it’s my husbands favourite, and lemon zest instead. Came out incredible, thank you so much!! So so easy to follow aswell!! 🙂

Excellent! Served it over vanilla ice cream. Great consistency and flavor. My only advice is to taste for sugar. It could need a little more depending on how sweet your berries are. Will make this again.

I’ve been in the predicament T.R. was in when he realized he didn’t have time to make the meringues. The Hamptons has a fabulous shop “Loaves & Fishes” owned by Anna Pump and he just went there and bought them. I wish it were that easy where I live! Perhaps some bake shops have them, I just haven’t checked. Ina has featured “pre-made” meringues in several of her segments, one in recently aired “Sunshine Food,” for her recipe Meringues with Cassis and Raspberries. As an aside, isn’t T.R. good looking! I’ve seen his modeling work in JCPenney ads/catalogues.

I use this recipe not only on meringues but on cakes I serve for dessert especially in summertime. Tonight it is a golden, lemon, almond cake with the stewed fruit and some dulce de leche whippped cream. I find this stewed fruit recipe very handy as it is better than just serving up sliced fruit as we like things to be a little bit “wet”. Love so many of Ina’s recipes and use them a lot.

Ina’s TV show had meringue with the fruit sauce, and even though the guy didn’t have enough time to make it, I’d hoped that I’d find the recipe for them. This lack of meringue recipe is also in a raspberry sauce that was supposed to accompany meringue shells, but no recipe for the shells was on this internet site. Quite disappointing. Why isn’t the food network taking care of this??? I can’t believe that Ina knows.

I’m not much on meringue, but as far as the berries these were great on cheesecake and pound cake or even just alone. This is a keeper.
