Ingredients
- 3 ounces pasteurized egg whites
- 1 teaspoon vanilla extract
- 4 cups confectioners’ sugar
Instructions
- In large bowl of stand mixer combine the egg whites and vanilla and beat until frothy. Add confectioners’ sugar gradually and mix on low speed until sugar is incorporated and mixture is shiny. Turn speed up to high and beat until mixture forms stiff, glossy peaks. This should take approximately 5 to 7 minutes. Add food coloring, if desired. For immediate use, transfer icing to pastry bag or heavy duty storage bag and pipe as desired. If using storage bag, clip corner. Store in airtight container in refrigerator for up to 3 days.

This is the best royal icing recipe I’ve used!
Wondering if I could heat seal my sugar cookies once decorated with this royal icing to preserve freshness for longer than a few days? Not sure if that’s possible with this recipe due to the raw eggs (albeit pasteurized). New to this so I appreciate any tips/feedback!
Why do Food Network recipes call for pasteurized egg whites? Once pasteurized they won’t whip up like egg whites separated from fresh eggs. Using fresh egg whites, this recipe works exactly as stated.

I made 4 batches of this Royal Icing recipe yesterday for my daughter’s Christmas cookie decorating party. We used piping bags and Betty Crocker gel food dye. Following the recipe to the letter, the icing turned out perfectly.

I hardly ever bake cookies and only have a wimpy portable hand mixer (which seems to have one speed only, in spite of numerous settings), plus one metal bowl big enough to use it with (and it has sloping sides). But my grandson wanted to ice and decorate Christmas cookies (I made gingerbread men from a packaged mix). THIS ROYAL ICING CAME OUT PERFECT! It was SO easy to do, worked exactly as described and the 6 year old was able to easily spread it on the cookies. Happy kid, happy Grandma!
