Raspberry Fool

Ingredients

  1. 1 1/2 cups vanilla nonfat yogurt
  2. 1 (10-ounce) package frozen raspberries, thawed
  3. 1/3 cup confectioners’ sugar
  4. 1/4 cup well-chilled heavy cream
  5. 4 ladyfinger cookies

Instructions

  1. Place the yogurt in a strainer lined with a paper towel and let it drain over a bowl to thicken in the refrigerator for at least 4 hours, and up to 1 day. Discard the liquid and set the thickened yogurt aside.
  2. Puree half the raspberries in a food processor until smooth. Strain into a large bowl, pressing the liquid out with a rubber spatula. Discard the seeds. Whisk in the confectioners’ sugar. Stir in the remaining raspberries.
  3. In a chilled small bowl whip the cream until stiff peaks are formed. Gently fold in the yogurt. Fold in the raspberry mixture.
  4. Spoon into cocktail glasses and chill, covered, for at least 1 hour. Serve with ladyfinger cookies.

I made it for dessert with strawberries and cool whip. I also used 1/4 cup of sugar and didn’t serve it with the lady finger. Everyone enjoyed it.

Tip:
You could substitute the heavy cream and sugar for low fat cool whip (add it to the the vanilla yogurt) and get the same creamy sweet taste, but fewer calories!

I made this for myself one hot day last week and it was awsome! I subistuted the rasberries for peaches and it was also good! I Plan on making it next summer all the time for a more lean, slimmer me!

This dessert is delicious… the perfect palate cleanser! I made the fool using strawberries rather than raspberries. My husband and I thought it would be great with blueberries too.

Made this with no sugar and piped into tall shot glasses, then served with lowfat lemon mini cup cakes for our Valentine’s tea. It was a hit. Used a pint of no-fat yogurt, vanilla, 1/2 cup whipped cream and 1 cup frozen raspberries thawed right from the bag – easy and super yummy.

This was very easy to make and so much lower in calories and fat than a regular Fool, but the taste was very good. I’m not sure how anyone could take all afternoon to make this (unless they just stood there staring at the yogurt draining and did nothing else!) It took me about 15 minutes. And I’m not sure how non-fat yogurt is “full of fat”. Yes, there is some fat from the 1/4 cream, but compared to the 2 cups of cream a regular fool recipie where you’re getting 26 grams of fat per serving, the 4 grams per serving here is a significant difference. The idea is to improve the recipe, but no one can make them fat free or calorie free!

As the first reviewer accurately points out, saturated fat-filled raspberry yogurt is what you’re making. With the saturated fat from whipping cream, this is anything but healthy. Don’t bother, it’s a waste of time, money, and bad calories.
