Raspberry and Oatmeal Swirls

Ingredients

  1. Deselect All
  2. 2 cups frozen raspberries
  3. 4 teaspoons confectioners’ sugar
  4. 2 heaping cups Greek or whole milk yogurt
  5. 1/2 cup oatmeal cookie crumbs
  6. Special equipment: 6 (3/4-cup capacity) glasses

Instructions

  1. Put the frozen raspberries into a blender with the sugar, and puree. You may have to be patient as they will be difficult to blitz at first since they are extremely hard when frozen.
  2. Spoon 1 to 2 teaspoons of the raspberry puree into each glass, top with 2 tablespoons of the yogurt and sprinkle a layer of cookie crumbs on top.
  3. Cover the crumbs with 1 more layer of yogurt, then raspberry puree and finally cookie crumbs again.
  4. These can be prepared the night before, in which case don’t sprinkle the final layer of cookie crumbs until you are ready to eat the swirls but leave the glasses with the yogurt on top, covered with plastic wrap.

Easy and delicious!

What a fresh and delicious idea. Working on that Greek yogurt, having used a heavier variety, which I could thin out with a little water. Been a while for the person challenged below this post, but the oatmeal ingredient is “oatmeal cookies,” which are crumbed as a layer. 1 star for this? Pretty obviously one of those pest (nice word for it) posters. It’s hard to believe anyone is as dense as their comments. If you have a question, why not at least middle-range the rating rather than dock the recipe for your own obtuseness ?? No, iIt’s a nasty gram … Sad.

Quick easy breakfast!

This was too simple to make. It took me all of 5 minutes to make this healthier version of a parfait. I did use vanilla yogurt instead of plain, and it was a hit with the family. Perfect for busy moms trying to get the kids out the door in the morning.
